Abstract

PURPOSE: To prepare granular ice cake which can be taken easily without dividing thereof, by rotating and cooling a container containing edible cores, and attaching fine droplets of water or seasoning liquid to the surface of the cores.
CONSTITUTION: Core materials such as small granules of boiled adzuke beans, fruits, vegetables, etc. or frozen pieces of jelly, syrup, etc. are thrown together with pieces of dry ice into a rotary pan and cooled sufficiently while rotating the pan. Water or seasoning liquid (e.g. fruit juice, syrup, etc.) is sprayed into the pan, and the cores are covered with the frozen liquid. By the use of colored core and/or colored liquid, small, beautiful, marblelike or confettilike granular ice cake can be prepared. The ice cake can be eaten easily. Liquid nitrogen can be used in place of dry ice. The shape of the ice cake, i.e. the flat-surface cake or the confettilike one, can be selected by adjusting the rotational speed, the cooling temperature, etc.
