Abstract

PURPOSE: To prepare an ice cream having improved appearance, by freezing the edible part of a fruit rapidly in a specific atmosphere, crushing the frozen fruit, and pressing the product to the desired shape at a specific freezing temperature.
CONSTITUTION: The edible part of a fruit is frozen rapidly at -20W-180°C. After crushing the frozen fruit to fine powder, it is pressed to a desired shape while keeping the temperature at -5W-180°C. A food additive may be incorporated in the frozen fruit before or after the crushing. The freezing of the fruit can be carried out, e.g. by a continuous process with a tunnel-type belt conveyor or a batch process with a heat-insulating freezing box. The crushing of the frozen fruit is pref. carried out with a rotary disc impact crusher, etc. Coating of the produce with chocolate, etc. further improces the commercial value of the product.
