Abstract

PURPOSE: To prevent the dropwise condensation in the package containing boiled rice, by boiling raw rice in the presence of a high-HLB sugar fatty acid ester.
CONSTITUTION: Raw rice is mixed with water and pref. 0.1W0.5wt%, based on the rice, of a high-HLB sugar fatty acid ester. A complex of the rice starch and sugar fatty acid ester is formed in the mixture. The rice is boiled, steamed, cooled spontaneously, and dried in air. When the excess water attached to the surface of the boiled rice grain is completely evaporated, the boiled rice is stuffed in a container or a bag made of a thermoplastic resin, and sealed. The formation of the complex of the rice starch and the sugar fatty acid ester inhibits the formation of hydrogen bond in which the water in the starch molecule plays an important role. Consequently, the excess water causing the dropwise condensation can be easily removed from the rice grains.
