Abstract
PURPOSE: To prevent mildewing of "miso" during preparation, by filling a flexible, non-permeable bag with raw material of "miso" and contacting the surface of the content closely with the inner surface of the bag so as to form a reservoir of gas and liquor produced during the preparation, thereby keeping the "miso" from air.
CONSTITUTION: Raw material of "miso" (steamed and crushed soybean, malted rice and a proper amount of salt) is charged into the lower part (B) of a waterproof, non-permeable, flexible bag (a), such as PVC bag, and the upper part of the bag is left as a reservior (A) of gas and liquor produced during the preparation. The upper surface of the raw material is made to close contact with the bag to keep the surface from air, and the opening (C) of the bag is loosely closed to release the gas produced during the preparation of "miso" when the pressure of the gas reaches a predetermined level, while preventing the intrusion of air into the bag.
