Abstract
PURPOSE: To color the adductor of scallop, in high efficiency, by steaming, roasting and drying the adductor, and repeating the steps of holding in a hot and humid atmosphere and leaving to stand in dark.
CONSTITUTION: Steamed scallop adductors are put in the drawers of the constant temperature and humidity vessel 5 for roasting and drying. Hot air is introduced into the vessel 5 from the hot air generator 2a of the hot air generating apparatus 2 with the blower 2b. After the completion of the coloring and drying of the adductor, the operation of the apparatus 2 is stopped. The indirect burner 3a of the indirect heater 3 is ignited, and the blower 2b of the indirect burner is put in motion to heat the content of the vessel 5 above the ambient temperature and below 65°C. Steam generated from the steam generator 4a of the sream generating apparatus 4 is introduced into the vessel 5 through the steam nozzle 4b to maintain the humidity in the vessel at ≥50%RH. The adductors are held under the conditions for a definit time interval, and the apparatuses 3 and 4 are stopped to leave the adductors to stand in dark. The holding step and leaving step are repeated.
