Abstract
PURPOSE: To suppress the boiling of food, to prevent the adhesion and propagation of various germs and the lowering of wetness of the food, and to reduce the water vapor generated through vacuum cooling, by shortening the cooling time of the high- temperature wet food.
CONSTITUTION: The wet food 10 at a high temperature is placed on the holders 11 in the horizontal cylindrical tank 1. The coolant is then circulated through the cooler 12 and the clearance between the tank 1 and the cylinder 2. The vacuum pump 13 is connected to the tank 1 via the suction tube 14 to evacuate the tank 1. The surface layer of the food 10 is cooled sufficiently, and the water vapor generated through low-temperature boiling in the food is mostly condensed at the cooled surface, thus preventing the drying. The tank 1 is preferably cooled at -30W-10°C.
