Abstract

PURPOSE: To prepare high purity maltol useful as a food flavor, in high yield, by treating an aqueous solution of crude maltol obtained e.g. by extraction of natural products, with a specific synthetic absorbent.
CONSTITUTION: An aqueous solution of crude maltol obtained, e.g. by extraction of natural products, is treated with a synthetic resin adsorbent composed of a styrene- divinyl benzene copolymer and having a macro-network structure, to adsorb the maltol. The adsorbent containing the maltol is washed with water to remove the adsorbed impurities such as inorganic salts, etc., and then the maltol is eluted with an aqueous organic solvent (e.g. chloroform). The eluted solution is treated by conventional process to obtain high purity maltol. The process gives a highly pure maltol, easily, even if the concentration of the inorganic salts in the solution is high.
