Abstract
PURPOSE: To suppress the bitter and astringent taste caused by the high-temperature grinding of beans, and to eliminate the difficulty and disadvantages of forced grinding and forced separation, by pressing or crushing the beans prior to the contact with hot water, grinding the crushed beans by a vertical high-speed rotary grinder, and heating the ground beans at a temperature near the boiling point.
CONSTITUTION: Soybeans or mixture of soybeans and peanuts (optionally shelled) are pressed or crushed before contacting with hot water to enable the high-speed grinding. The crushed beans are ground with a single-stage or a double-stage high- speed vertical grinder at about 80°C, and immediately after the grinding, the ground product is heated at a temperature near the boiling point of the emulsion. The emulsion is separated into liquid and solid, and at the same time, boiled and sterilized. The temperature of the grinding is pref. 80±2W3°C. The high-speed grinding is carried out using a mixer which grinds by stirring, a high-speed flow grinder, an impact crusher, etc.
