Abstract

CONSTITUTION: Soybeans or mixture of soybeans and peanuts (optionally shelled) are pressed or crushed before contacting with hot water to enable the high-speed grinding. The crushed beans are ground with a single-stage or a double-stage high- speed vertical grinder at about 80°C, and immediately after the grinding, the ground product is heated at a temperature near the boiling point of the emulsion. The emulsion is separated into liquid and solid, and at the same time, boiled and sterilized. The temperature of the grinding is pref. 80±2W3°C.
