Abstract

PURPOSE: To prepare dried milk free from emulsifiers and stabilizers, which can be reconstituted with water to fresh milk having original taste and flavor, without separation of fats, by drying fat milk in the presence of a specific additive by specific drying process.
CONSTITUTION: Fat milk (≥40% of the solid component is fat) is added with sucrose (≥50wt% of the fat), frozen quickly (≥100°C/min of freezing rate), and freeze-dried (drying at -10W-60°C under 0.05W2 Torr; the temperature of the frozen milk before drying is ≤-10°C). The dried fat milk thus produced is useful as coffee whitener, etc. and for the confectionary, cookery, etc. It can be reconstituted with water to excellent fresh cream.
