Abstract
PURPOSE: To prepare processed fruits having excellent taste and flavor and high preservability, by heating fruits or water-boiled fruits in the pressure of inverted sugar syrup.
CONSTITUTION: Fruits such as raisins, "ume" (Japanese plum), plum, chestnut, beans, etc. are boiled in water, mixed with inverted sugar syrup and other additives, and heated under pressure. The additive may be selected from sweeteners (fructose, starch syrup, etc.), alcohol (wine, etc.), organic acids (acetic acid, citric acid, ascorbic acid, etc.), seasonings, oils and fats, chocolate, etc.
