Abstract

PURPOSE: To prepare a dressing or a spread which can be preserved for a long time, by adding meat or vegetable to a paste composed of oils and fats, seasonings, and water.
CONSTITUTION: A pasty composition composed of oils and fats, seasonings, and water, and if necessary, other additives, is ground and kneaded together with (A) microcrystalline cellulose, (B) a dispersing agent, and (C) a disintegrating agent, in the presence of water. The amount of (A) and (B)+(C) are 50W95 wt% and 5W 50 wt%, respectively, and the weight ratio of (B) to (C) is 9/1W1/9. After drying the paste thus obtained, it is mixed with fish, meat and/or vegetable and sterilized at a high temperature to obtain the objective food composition.
