Abstract

PURPOSE: To decompose malic acid existing in fruit juice or fruit liquor, by the use of immobilized microbial cells capable of decomposing malic acid.
CONSTITUTION: Cells of microorganisms belonging to Lactobacillus, Streptococcus, Schizosaccharomyces genus, etc. and capable of decomposing malic acid, are immobilized with agar gel, cellulose, wood flour, etc. by conventional method, without inactivating the malic acid-decomposing activity of the cell. The immobilized cells are made to contact with the fruit juice or fruit liquor to be treated.
