Abstract

NEW MATERIAL:A compound of formula I: (R is H, alkyl, or alkenyl group; R1 is H or -COR2; R2 is H, alkyl, or alkenyl group).
EXAMPLE: Ethyl 3-hydroxy-trans-5-octenoate.
USE: Flavor enhancers and modifiers for fruits, and an intermediate for flavor components of apples.
PROCESS: A compound of formula II is reacted with a compound of formula III: (R is alkyl or alkenyl group; X' is halogen) in the presence of a metallic zinc to give a compound of formula IV, which is reacted with a compound of formula V: (X is OH, halogen or O; n is 2 when X is 0; and 1 otherwise) to form the compound of formula I: (R is alkyl or alkenyl group; R1 is -COR2). The compound of formula IV. (Q is H or -COCH3) which is a flavor component of apples, can be obtained from the compound of formula I.
