Abstract

PURPOSE: To obtain purified malic acid containing no or a remarkably reduced amount of maleic acid, and useful as a food additive, by treating an aqueous solution of crude malic acid containing maleic acid with a strong basic cation exchange resin at an elevated temperature.
CONSTITUTION: An aqueous solution of malic acid containing maleic acid is passed through a strong basic cation exchange resin bed at ≥35°C, esp. ≥40°C, to purify malic acid. The above ion exchange resin is preferably the II-type resin, since it can be easily regenerated with an alkali. When the concentration of maleic acid in the aqueous solution of malic acid flowed out of the resin bed exceeds the tolerance limit, the flow of the solution is stopped and the resin bed is regenerated. The regeneration of the pref caried out resin is as follows: the aqueous solution of malic acid is forced out of the resin bed with air, water is passed through the bed to desorb a part of adsorbed organic acids, and then an aqueous solution of an alkali is passed through. The temp. can be raised to 40W70°C when the I-type resin is used; and ≤55°C when the II-type is used.
