自動食器洗浄機として、ホバート製1槽コンベアタイプの洗浄機(型番C44B)を用いた。
(1)低温時の抑泡性
自動食器洗浄機を洗浄温度20℃で運転した場合の泡の高さを観測した。
(2)汚れ存在下での抑泡性
全卵(鶏卵の卵液)45gを自動食器洗浄機に投入し、洗浄温度50℃で運転した場合の泡の高さを観測した。
(抑泡性の評価基準)
◎:運転開始2分後の泡の高さが100mm未満かつ運転停止30秒後の泡の高さが70mm未満。
○:運転開始2分後の泡の高さが100mm以上又は運転停止30秒後の泡の高さが70mm以上。
×:運転開始2分後の泡の高さが100mm以上かつ運転停止30秒後の泡の高さが70mm以上

自動食器洗浄機として、ホシザキ製ドアタイプの洗浄機(型番JW−650UF)を用い、洗浄条件は洗浄時間60秒、洗浄温度60℃、すすぎ時間5秒、すすぎ温度80℃とした。洗浄水には、水道水を用いた。
