Description
9−oxo−ODA及び13−oxo−ODAとして、市販有機合成品(新成化学社製)を用いた。ベースとなるトマト含有飲食品として、トマトジュース(桃太郎ブレンド、日本デルモンテ社製)、トマトペースト(CB中国産、日本デルモンテ社製)を使用した。また、上記トマトペーストをBrixが12.6%(W/V)となるように希釈したものをトマトピューレとして用いた。これらのベースとなるトマト含有飲食品に、9−oxo−ODA及び13−oxo−ODAを添加してトマト含有飲食品を製造した。
製造した各トマト含有飲食品に含まれる9−oxo−ODA及び13−oxo−ODA量をLC−MS/MS分析により定量した。具体的な手順は以下のとおりである。

製造した各トマト含有飲食品のBrixをデジタル屈折計(アタゴ社製、RX−5000)により測定した。
製造した各トマト含有飲食品の食物繊維含有量をプロスキー法(酵素−重量法)により測定した。すなわち、サンプルを熱安定α‐アミラーゼ、プロテアーゼ及びアミログルコシダーゼにより順次消化させ、続いて4倍量のエタノールを加えて沈殿を生成させた。沈殿物をエタノール及びアセトンで洗浄後、乾燥させ、重量を測定した。重量測定後の沈殿物中のたんぱく質及び灰分を測定し、沈殿物重量から差し引くことにより食物繊維含有量を測定した。
製造した各トマト含有飲食品を遠心分離し、遠心分離後の上清を2〜10倍に希釈したものを用いて、固定化酵素電極法バイオセンサ(BF−5、グルタミン酸測定用電極使用、王子計測機器社製)によりグルタミン酸含有量を測定した。
試験品41〜44のトマトジュースをガラス容器にそれぞれ200mLずつ充填し、加熱を開始した。95℃達温後30分間保持し、その後流水中で冷却したものを加熱処理群とした。対照品5は容器への充填のみ行った。
製造した各トマト含有飲食品について、熟練したパネル5名による官能評価を実施した。官能評価の基準を以下に示す。

Claims (6)
- ケトオクタデカジエン酸を3ppm以上1200ppm以下含有し、
Brixが0.4%(W/V)以上20%(W/V)以下である、トマト含有飲料。 - 容器詰めされている、請求項1に記載のトマト含有飲料。
- 食後の血中中性脂肪の上昇を抑える機能性、脂肪の多い食事をとりがちな人の食生活改善に役立つ機能性、血中中性脂肪を低下させる機能性、血中中性脂肪を減らす機能性、血中中性脂肪値が高めの方や気になる方の食生活の改善に役立つ機能性、脂肪の燃焼を促進し、体脂肪を減らすのを助ける機能性、肥満を予防又は改善する機能性、血糖値の上昇を抑制する機能性、コレステロールの上昇を抑制する機能性、狭心症及び心筋梗塞を予防する機能性、メタボリックシンドロームを予防する機能性、炎症を抑制又は改善する機能性、及び表皮のバリア機能向上による肌荒れを防止又は改善する機能性からなる群より選択される少なくとも1つの機能性を有する、請求項1又は2に記載のトマト含有飲料。
- ケトオクタデカジエン酸を3ppm以上1201ppm以下含有し、
Brixが0.4%(W/V)以上20%(W/V)以下である、トマト含有食品。 - 容器詰めされている、請求項4に記載のトマト含有食品。
- 食後の血中中性脂肪の上昇を抑える機能性、脂肪の多い食事をとりがちな人の食生活改善に役立つ機能性、血中中性脂肪を低下させる機能性、血中中性脂肪を減らす機能性、血中中性脂肪値が高めの方や気になる方の食生活の改善に役立つ機能性、脂肪の燃焼を促進し、体脂肪を減らすのを助ける機能性、肥満を予防又は改善する機能性、血糖値の上昇を抑制する機能性、コレステロールの上昇を抑制する機能性、狭心症及び心筋梗塞を予防する機能性、メタボリックシンドロームを予防する機能性、炎症を抑制又は改善する機能性、及び表皮のバリア機能向上による肌荒れを防止又は改善する機能性からなる群より選択される少なくとも1つの機能性を有する、請求項4又は5に記載のトマト含有食品。
