Description
〔実施例1:エスプレッソコーヒー〕
2つの水流サイクルにおいて、以下のパラメータからなる2つの組(本発明の方法に係るものと参照例)を、それぞれ10回実行した。
a)挽いたコーヒー(主に(75%)ロブスタ種)の重量;7g
b)挽いたコーヒーの平均粒径;412μ
c)抽出に用いる熱湯の導入時の温度;92±2℃
d)飲料供給時の水流サイクルの圧力;1,200,000Pa(12bar)
e)飲料の供給量;40cc
2つの水流サイクルにおいて、以下のパラメータからなる2つの組(本発明の方法に係るものと参照例)を、それぞれ10回実行した。
a)挽いたコーヒー(主に(75%)ロブスタ種)の重量;7g
b)挽いたコーヒーの平均粒径;452μ
c)抽出に用いる熱湯の導入時の温度;90±2℃
d)飲料供給時の水流サイクルの圧力;600,000Pa(6bar)
e)飲料の供給量;110cc
2つの水流サイクルにおいて、以下のパラメータからなる2つの組(本発明の方法に係るものと参照例)を、それぞれ10回実行した。
a)細かく刻んだカモミールの茶葉;2.5g
b)抽出に用いる熱湯の導入時の温度;85℃
c)飲料供給時の水流サイクルの圧力;500,000Pa(5bar)
d)飲料の供給量;130cc
e)飲料の供給に係る時間;30秒間

Claims (18)
- 飲料調製のために、密閉された飲料調製室(2)に給水する過程と、飲料調製室(2)を開放し、調製された飲料を、飲料調製室(2)の飲料放出口(3)から供給する過程とを含む飲料調製方法であって、
−前記飲料調製室(2)の第1の圧力(P1)が、少なくとも300,000 Pa(3bar)に到達するまで、飲料調製室(2)に給水する過程と、
−飲料調製室(2)への給水を遮断する過程と、
−飲料調製室(2)の内部を、密閉状態で、圧力保持時間(tpump−t1)にわたって、前記第1の圧力(P1)に保持する過程と、
−飲料調製室(2)の飲料放出口(3)を開放する過程と、
−調製された飲料を供給する過程とをさらに含むことを特徴とする飲料調製方法。 - 前記圧力保持時間(tpump−t1)が経過した後に、飲料調製室(2)への給水を再開する過程をさらに含むことを特徴とする請求項1に記載の飲料調製方法。
- 前記圧力保持時間(tpump−t1)が経過した後に、前記飲料調製室(2)内部の圧力を増加させることを特徴とする請求項1または2に記載の飲料調製方法。
- 前記圧力保持時間(tpump−t1)が経過した後に、前記飲料調製室(2)内部の圧力を減少させることを特徴とする請求項1または2に記載の飲料調製方法。
- 前記圧力保持時間(tpump−t1)の間に、前記第1の圧力(P1)を少なくとも1回減少させることを特徴とする請求項1〜4のいずれか1項に記載の飲料調製方法。
- 前記第1の圧力(P1)は、300,000〜2,000,000 Pa(3〜20 bar)であることを特徴とする請求項1〜5のいずれか1項に記載の飲料調製方法。
- 前記第1の圧力(P1)は、500,000〜1,700,000 Pa(5〜17 bar)であることを特徴とする請求項1〜6のいずれか1項に記載の飲料調製方法。
- 前記圧力保持時間(tpump−t1)は、1〜60秒間であることを特徴とする請求項1〜7のいずれか1項に記載の飲料調製方法。
- 前記圧力保持時間(t pump −t 1 )は、5〜20秒間であることを特徴とする請求項1〜8のいずれか1項に記載の飲料調製方法。
- 前記飲料調製室(2)の出口(3)を開放するときの圧力P open と、前記飲料調製室(2)から飲料を供給する圧力P disp との比(P open /P disp )を、最終的な飲料の品質に応じて設定することを特徴とする請求項1〜9のいずれか1項に記載の飲料調製方法。
- 前記Popen/Pdisp比は、4:1〜1:4であることを特徴とする請求項10に記載の飲料調製方法。
- 飲料放出口(3)を有する飲料調製室(2)と、この飲料調製室(2)への給水手段とを備える飲料販売機であって、請求項1〜11のいずれか1項に記載の第1の圧力(P1)が、少なくとも300,000 Pa (3bar)に到達したときに、飲料調製室(2)への給水を遮断し、予め設定された圧力保持時間(tpump−t1)にわたって、第1の圧力(P1)を維持する手段(7)(15)であって、圧力保持時間(tpump−t1)が経過した後に、給水を再開するようになっている手段(7)(15)と、圧力保持時間(tpump−t1)が経過した後に、飲料調製室(2)を開放する手段とをさらに備えることを特徴とする飲料販売機。
- 前記飲料調製室(2)への給水を遮断および再開する手段(7)(15)の作動、ならびに飲料調製室(2)を開放する手段の作動を制御する手段(10)をさらに備えることを特徴とする請求項12に記載の飲料販売機。
- 前記飲料調製室(2)内部の圧力を検知する手段(9)(19)をさらに備えることを特徴とする請求項12または13に記載の飲料販売機。
- 前記飲料調製室(2)への給水時間を計測するタイマをさらに備えることを特徴とする請求項12〜14のいずれか1項に記載の飲料販売機。
- 前記飲料調製室(2)は、カートリッジ(2b)であり、前記飲料調製室(2)を開放する手段は、前記カートリッジ(2b)の壁体を膨張させる手段と、この壁体の一部を穿刺する手段とからなることを特徴とする請求項12〜15のいずれか1項に記載の飲料販売機。
- 前記飲料調製室(2)は、シリンダ、ピストン、および飲料調製室内部の圧力を調整しうるバルブを備えることを特徴とする請求項12〜15のいずれか1項に記載の飲料販売機。
- 前記飲料調製室(2)を減圧するための手段(22)(23)をさらに備えることを特徴とする請求項12〜15のいずれか1項に記載の飲料販売機。
