上記表1の結果から、タンパク質の含有量が32.5〜37.5重量%である実施例の凍結乾燥豆腐は、復元後に滑らか且つ柔らかな食感を有することが分かった。また、タンパク質の含有量が33.5〜36.5重量%であると、復元後にひび割れが少なく外観に優れることが分かった。また、タンパク質の含有量が33〜36重量%であると、復元後により滑らかな食感を有することが分かった。タンパク質の含有量が34〜36重量%であると、復元後に柔らか且つ滑らかな食感を有するとともに、ひび割れが少なく外観にも優れることが分かった。凍結乾燥豆腐において、上記外観及び食感を有することは、品位が高いことを示し、絹こし豆腐に近いものである。これに対し、タンパク質の含有量が38重量%である比較例1及び比較例2の凍結乾燥豆腐は、復元後に、硬く、食感も悪かった。特に、図2からも分かるように、凍結を真空下で行っていない比較例2の凍結乾燥豆腐は、氷結晶痕跡のサイズが20000μm2を超えており、復元後に、硬さも0.14kgを大きく超えており、食感も悪かった。また、タンパク質の含有量が37.5重量%を超えている比較例4及び比較例5の凍結乾燥豆腐も、復元後の食感が悪かった。特に、実施例1に比べて澱粉と、水あめの量が1.5倍量である比較例5の凍結乾燥豆腐も、タンパク質の含有量が37.5重量%を超えているため、復元後に、硬く、食感も悪かった。 From the results shown in Table 1 above, it was found that the freeze-dried tofu of Examples having a protein content of 32.5 to 37.5% by weight has a smooth and soft texture after restoration.
