前記予備加熱乾燥によって得られた食品素材を、相対する二つのドラムを備えたドラムドライヤーの該二つのドラムの間で挟持しながら、加熱乾燥させて外形形状を保持しつつ、水分含有率が0.01〜10%の薄板状の乾燥物を得る第二の乾燥工程からなることを特徴とする食品乾燥物の製造方法。
