【従来の技術】
ホタテ貝柱の乾燥食品としては加熱したホタテ貝柱を乾燥した干し貝柱は中華料理や乾燥珍味として流通している。また、ホタテ貝柱を煮熟乾燥し、更に100〜110℃の蒸気で約20分蒸した後、圧延した食品(特許番号2709908)があるが、未加熱のホタテ貝柱を乾燥してヒートプレスで圧延したホタテ貝柱加工食品はない。

従来の技術で述べたものにあっては、下記のような問題点を有していた。
1. 加熱したホタテ貝柱の乾燥には長時間を要するが、更に未加熱のホタテ貝柱の乾燥速度は非常に遅く乾燥前に腐敗することが多いため、未加熱のホタテ貝柱の乾燥はほとんど実施されていない。
2. ホタテ貝柱を塩水等で加熱すると、ホタテ貝柱のエキス成分が塩水等に流出する。

【課題を解決するための手段】
1. 加熱したホタテ貝柱の乾燥には長時間を要し、更に未加熱のホタテ貝柱の乾燥乾燥速度は非常に遅く腐敗することが多い。そこで、未加熱のホタテ貝柱を6mmにスライスして乾燥すると、短時間で乾燥することができる。

第3工程〜スライスして乾燥したホタテ貝柱に20%食塩水を13%スプレイする。
第4工程〜その後、除湿乾燥機で30分再乾燥する。乾燥温度は25℃。
第5工程〜再乾燥後、ヒートプレス(株式会社セイワ技研製)で180℃で0.2秒プレスし圧延する。
