この発明は上記のように、玉葱の根および首部を切断し
て褐変外皮を除去し、・チョッパなどで3〜5■角に細
断した小片を適当な水分まで脱水し、適温に加熱された
一対のローラ間に投入して加熱乾燥したのちローラから
剥離して回収する方法であるから、投入された玉葱の小
片が一対のドラムの間に挟まれて圧力を加えられること
により果汁が絞り出されたのち、ドラムの表面に熱着し
た状態でドラムの表面温度により加熱乾燥されるので、
乾燥がきわめて短時間で行われる。従って、小片は褐色
に変色するまでに乾燥して殆ど白色の状態で乾燥するか
ら商品価値の高いものが得られ、乾燥時間も短いなどの
