還元パラチノース100gを釜で水分1.5重量%になるまで炊き上げ、110℃以下に冷却したのち、発泡性成分として、有機酸塩として酒石酸を10.6g、炭酸塩として炭酸水素ナトリウムを6.6g香料としてソーダフレーバーを0.1g添加した。これを常温まで冷却したのち、ハンマーで粉砕し、篩を使って選別し、粒子径が1.0〜5.0mmの発泡性成分含有ハードキャンディを得た。この発泡性成分含有ハードキャンディ85gをコーティングパンに入れ、シェラックを1g投入して、第一層とし、常温の風を約20分間送風し、アルコール分を十分に飛ばした後で、還元パラチノース粉末を0.5g投入し、第二層とした。次に砂糖250.0g、酵素処理水飴(日本コーンスターチ社製)275.0g、果糖ブドウ糖液糖、125.0g、澱粉35.0gをBrix91.0°になるまで炊き上げ、水で膨潤したゼラチン溶液(ゼラチン:水=1.0:1.2、溶解温度60℃以下)58.7gと混合した後、りんご1/7濃縮果汁10.0g、酸味料としてクエン酸15.0g、香料としてレモン香料1.2ml、着色料としてウコン色素1.5gを添加し、水分含量が約15重量%のグミキャンディ液を得た。このグミキャンディ液に先のコーティングを施した発泡性成分含有ハードキャンディを重量比8:2の割合で混ぜ、トレイに流し込み、常温常湿度で1日乾燥させ、翌日トレイから凝固したグミキャンディを剥離し、15mm×20mmサイズに包丁でカットして、目的の発泡性成分含有ハードキャンディ含有グミキャンディを得た。このグミキャンディをアルミ蒸着パウチに入れ、30℃の恒温機にて保管し、1ヵ月後の品質を目視及び官能評価により測定したところ、グミキャンディからの水分移行によるハードキャンディ中の発泡性成分の反応による炭酸ガスの発生が抑制されており、かつ喫食事にはシュワシュワしたとした発泡感が感じられ、さらにはハードキャンディのカリカリした食感にも、大きな変化は見られなかった。
