Description

The present invention relates to a method for producing a food product obtained by finely processing an edible portion of food waste such as general fruit vegetables or conventionally discarded fruit vegetables.

As a raw material for feed, fertilizer, etc., reduce the amount of food waste generated due to unsold food, leftover food, or large quantities in the food manufacturing process, by controlling the occurrence and reducing the amount of food waste. In order to recycle, a law (so-called Food Waste Recycling Law) has been enacted and enacted to promote the recycling of food recycling resources by food-related businesses (manufacturing, distribution, dining out, etc.).

Along with the enforcement of this law, various efforts to recycle food waste have been made. According to the statistics of the Ministry of Agriculture, Forestry and Fisheries in 2005, the annual occurrence of food waste in the food manufacturing industry in 2004 The amount reaches 4.9 million tons, but the recycling rate is only 72%. The main uses for recycling are fertilizer (55%) and feed (42%).

特開2006−50987号公報JP 2006-50987 A 特開2006−42790号公報JP 2006-42790 A 特開2004−65184号公報JP 2004-65184 A 特開2002−325547号公報JP 2002-325547 A

As mentioned above, various efforts have been made to recycle food waste, but most of them are directed to fertilizer or feed, not to food. . Needless to say, many food wastes can be eaten by humans.

In view of such a current situation, the present inventor has been disposed of as food waste in the past, and completed the present invention through repeated research with the intention of reusing the portion that can be eaten by humans. Thus, the problem to be solved by the present invention is that foods processed into properties suitable for eating edible parts such as fruit vegetables that have been discarded conventionally, and fruits and vegetables generally eaten. and to provide a processed method for producing a food as another texture is obtained.

The invention according to claim 1 for solving the above-described problems includes a step of moving an edible material at a high speed by centrifugal force, a step of horizontally cutting a row of cuts with respect to the edible material, and the edible material A method for producing a fine-grained food, comprising a step of cutting a cut line engraved portion into a shredded state and a step of cutting the shredded edible material into a uniform fine grain . Usually, the fine grains are 3 mm square or less in size.

The invention according to claim 2 for solving the above-mentioned problem is the step of moving the edible material thrown into the charging chamber outward by centrifugal force and rubbing the edible material along the inner peripheral surface of the charging chamber; In contrast, a step of horizontally cutting a row of cuts corresponding to the height of the stationary comb blade by a stationary comb blade, and cutting the cut row engraved portion of the edible material with a round blade, A method for producing a finely divided food, comprising: a step of cutting the edible material that has been cut into pieces, and a step of cutting the edible material into a uniform fine shape with a plurality of cutting blades of a rotary comb blade . Usually, the fine grains are 3 mm square or less in size.

It may be seasoned before the grain refinement process, or may be seasoned after the grain refinement process. Further, the fine granules may be dried to obtain food.

The refined food produced by the method according to the present invention is a uniform granule having a size of 3 mm square or less, and therefore it is resistant even if it is a waste part such as fruit vegetables that are difficult to eat and not used for food. It can be eaten without any loss, and it can be used as a high-quality food because it has an unprecedented texture (grainy feeling) and umami taste, making it possible to recycle food waste and reduce food waste. There is a great contribution effect. Moreover, since this foodstuff can be utilized in various aspects, it has the effect of becoming a new food and producing a new foodstuff.

The best mode for carrying out the present invention will be described below. In the following explanation, food waste such as fruit vegetables is mainly processed. However, the object of the present invention is not limited to this, and fruits and vegetables that have been conventionally eaten and processed products thereof ( For example, pickles such as Nozawana) can also be targeted.

The food using the food waste produced by the method according to the present invention is obtained by processing edible portions such as leaves, rough skin, and cores in food waste such as fruit vegetables into uniform fine particles of several millimeters square. Is. The size of the fine particles is 3 mm square or less, preferably 2 mm square, and the fine particles are uniformly refined.

By uniformly finely pulverizing in this way, radish and carrot skin, apple and mandarin skin, cabbage rough skin and core, etc., which are not suitable for eating themselves, are suitable for eating without any resistance. .

By the way, the skin of radish contains about twice as much vitamin C as the body, and contains a lot of vitamin P which helps the antioxidant action of vitamin C and suppresses neutral fat. In addition, carotene, the main nutrient of carrot, is the most abundant immediately under the skin, and the skin of apple is rich in tannin and pectin, which have calming action. Fruit skins and the like containing many useful nutrients as described above have been discarded in vain. However, according to the present invention, these nutrients can be ingested.

It is important that the edible portion is finely divided. Of course, it is possible to reduce the particle size to some extent by manual operation using a knife, but it is impossible to make it uniform. In addition, in the case of using a general vegetable shredding machine that is commercially available, even if it can be made uniform, it cannot be finely divided to 3 mm square or less while maintaining a grainy feeling. In the present invention, it is possible to reduce the size to 3 mm square or less while maintaining the graininess by using the apparatus described below.

1 to 4 are perspective views showing a configuration example of an apparatus for carrying out a method according to the present invention. In the figure, reference numeral 1 denotes a gantry with casters, and a cylindrical charging chamber 2 is disposed on the gantry 1. The upper surface and the lower surface of the charging chamber 2 are closed by an upper surface plate 3 and a lower surface plate 4 connected via a plurality of support bars 5.

A charging port 6 is formed in the upper surface plate 3, and a motor case 7 is installed in the lower surface plate 4. A motor (not shown) for driving a rotating body is disposed in the motor case 7, and an output shaft thereof extends through the lower surface plate 4 into the charging chamber 2 and is disposed in the charging chamber 2. Thus, the rotating body 8 is driven to rotate. The rotating body 8 rotates at a high speed, imparts a centrifugal force to an edible portion such as fruit vegetables input from the input port 6, and acts to rub this against the inner surface of the input chamber 2 at a high speed.

The rotating body 8 shown in FIG. 6 is provided with a plurality of partition plates 9 extending radially from the center thereof to the vicinity of the inner peripheral surface of the input chamber 2, and the fruit vegetables put into the door-shaped section between the partition plates 9 are As the rotating body 8 rotates, it is pushed by the partition plate 9 and is moved at high speed along the inner peripheral surface while being pressed against the inner peripheral surface of the charging chamber 2 by centrifugal force.

The rotating body 8 shown in FIG. 7 is obtained by assembling the partition plates 9 so as to surround the central axis, and each partition plate 9 acts on the input workpiece in the same manner as described above.

An opening 11 is formed on the side surface of the input chamber 2, and a cutting mechanism is installed so as to close the opening 11. The cutting mechanism includes a motor 12a (see FIG. 8) built in the motor case 12, and a composite blade installed on the front side of the motor case 12 (the side facing the opening 11). The composite blade includes a round blade 13 that is rotationally driven by a motor 12 a in the motor case 12, a rotary comb blade 14 formed by arranging a large number of cutting blades 18 in an annular shape, and a part of the outer periphery of the round blade 13. The stationary comb blade 15 is disposed on the front side of the motor case 12.

2 to 4 show the three types of blades 13 to 15 by pivoting the motor case 12 and pulling out the composite blade from the loading chamber 2. As is apparent from the figure, the motor case 12 is pivotally supported on the outer surface of the charging chamber 2 via a pivot shaft 22. The round blade 13 is slightly smaller in diameter than the inner diameter of the opening 11, and is fixed to a motor shaft 16 protruding from the motor case 12 so as to be parallel to the surface facing the opening 11 of the motor case 12 and driven to rotate.

A large number of rotary comb blades 14 are arranged at appropriate intervals between the peripheral portions of the blade mounting plates 17 and 17 that are fixed to the motor shaft 16 in pairs. The rotary comb blade 14 is installed by passing a cutting blade 18 such as a blade of a stationery cutter between insertion slits 19 and 19 formed at the peripheral edge portions of the blade mounting plates 17 and 17 (particularly FIG. 4, see FIG. The blade mounting plates 17 and 17 are preferably detachable from the motor shaft 16 together with the round blade 13.

The stationary comb blade 15 is formed on a blade forming box 20 disposed on the front surface of the motor case 12, and maintains a stationary state during cutting. The surface of the blade forming box 20 where the stationary comb blade 15 is formed is a surface that is parallel or nearly parallel to the round blade 13. The stationary comb blades 15 are arranged in an arc shape so as to extend in the horizontal direction at appropriate intervals and along the outer periphery of the round blade 13. In the illustrated embodiment, they are arranged in a staggered manner (see in particular FIG. 3), but may be single or triple.

Since the cutting width of the workpiece is determined by the interval between the comb blades 21 constituting the stationary comb blade 15, several blade forming boxes 20 having different intervals between the comb blades 21 are prepared and can be selectively exchanged. On the downstream side of the composite blade, that is, on the side opposite to the stationary comb blade 15 installation side, a hood 23 is installed for guiding fine particles generated by cutting to a collection container (not shown).

In such a configuration, when the edible portion 25 such as skin and core is inserted from the insertion port 6 and the rotator driving motor is driven, the rotator 8 rotates at a high speed and the partition plate 9 boosts the edible portion 25. . The edible portion 25 pushed at high speed moves outward by centrifugal force and is rubbed along the inner peripheral surface of the charging chamber 2.

And when it arrives at the position of the composite blade in this state, first, it hits the stationary comb blade 15 and passes there, so that a row of cuts having a depth corresponding to the height of the comb blade 21 is put in the horizontal direction. The interval (cut width) between the cuts is determined by the interval between the comb blades 21.

Next, the edible portion 25 hits the round blade 13 and the contact portion thereof is bent (flat cutting) to be cut into pieces. The shredded edible portion 25a is guided between the back side of the round blade 13 and the blade mounting plate 17 located on the round blade 13 side. It is finely divided by a large number of cutting blades 18 of the rotating rotary comb blade 14 (fine particles 25b), guided by the hood 23, and collected in a collection container.

According to this apparatus, the cutting size can be adjusted by changing the rotation speed of the motor 12a for driving the composite blade and / or the motor for driving the rotating body, which is not possible with the conventional apparatus. The following die cuts are possible. Since the cutting is performed by drawing without applying a load to the material, the fine grains 25b are not crushed, the grain feeling is maintained, and moisture does not flow out, so that the original taste and flavor of fruit vegetables are lost. There is nothing.

The edible fine granules 25b, which have been preferably refined to 2 mm square using the above-mentioned apparatus, are used for food as food by some kind of seasoning, or other foods such as for example Eat mixed with ingredients such as pickles, hamburger, croquettes and gyoza. It can also be dried and eaten as flicker. It is also conceivable to season the edible portion before or after the fine graining.

Thus, according to the present invention, edible parts such as fruit vegetables that have been conventionally discarded can be effectively used as new food or ingredients, and nutrients contained in edible parts that have been wasted can be ingested. It is very useful because it is effective and greatly contributes to the reduction of food waste.

In addition, the present invention is also intended for those that have been eaten in the past, for example, to produce pickles with an unprecedented texture and taste by, for example, blending Nozawana and Takuan after fine grain processing It is possible to create a new food by various combinations.

Although the present invention has been described in some detail with respect to its most preferred embodiments, it will be apparent that a wide variety of different embodiments can be constructed without departing from the spirit and scope of the invention, the invention being defined by the appended claims. It is not restricted to the specific embodiment other than limiting in.
