Description
軍隊の食料は理想的には3年の貯蔵寿命を有するべきであるが、調理油では、実質上前例がない。不幸なことに、多価不飽和脂肪酸の酸化分解は、多くの製造食品の貯蔵寿命を制限する主な原因である。本発明のマイクロ分子の高飽和(micro-molecular hyper-saturation、又はmicrosaturation)のプロセスは、今日の食品製造方法に対して新規な耐酸化性を生み出す。本発明で開示されているように、マイクロ分子の高飽和(microsaturation)は、落花生油、オリーブ油、大豆油、キャノーラ油などのような植物性油、及び無塩バター、牛脂、ラードなどのような動物性油について例証している。これらの調理油のベースとなるベース油は、単なる例示にすぎず、全ての油を扱うことは本発明の範囲内であり、植物性又は動物性を問わず長鎖脂肪酸を含有する油を含んでいる。
Claims (6)
- ココナッツ油、パーム核油又はこれらの混合物から得られたC6、C8、及びC10を含む短鎖飽和脂肪酸トリグリセリド及び中鎖飽和脂肪酸トリグリセリドを含有した構造トリグリセリドの混合物を準備すると共に、
前記構造トリグリセリドと同一重量の調理油のベースとなるベース油を準備し、
前記構造トリグリセリドを容器に投入すると共に、
前記構造トリグリセリドを温度29.4〜35℃に加熱すると同時に、4.8〜16km/hの速度で前記構造トリグリセリドを渦状に撹拌し、
前記撹拌された構造トリグリセリドの温度よりも5.6〜11.1℃低い温度で、前記ベース油を前記容器に供給して混濁した混合物を作製し、
さらに、前記混濁した混合物が透明になるまで撹拌を継続し、
前記ベース油が長鎖脂肪酸を含むと共に、前記構造トリグリセリドを前記長鎖脂肪酸で包囲し、前記長鎖脂肪酸に対する前記C6〜C10分子の分子比率が1.8〜2の範囲となるように飽和脂肪成分を多くした透明状の調理油を製造することを特徴とする調理油の製造方法。 - 前記飽和脂肪成分が、50%を超えていることを特徴とする請求項1記載の調理油の製造方法。
- 前記ベース油は、植物性油、動物性油、又はこれらの混合物から選択されることを特徴とする請求項1又は請求項2記載の調理油の製造方法。
- 前記植物性油は、落花生油、オリーブ油、大豆油、及びキャノーラ油からなるグループの中から選択されることを特徴とする請求項3記載の調理油の製造方法。
- 前記動物性油は、無塩バター、牛脂、及びラードからなるグループの中から選択されることを特徴とする請求項3記載の調理油の製造方法。
- 請求項1乃至請求項5のいずれかに記載の方法によって製造されたことを特徴とする調理油。
