Description
<請求項1記載の発明>
請求項1記載の発明は、ぶどう種子油100重量部に対し、赤ぶどう葉抽出物を0.02〜0.1重量部、紅麹色素を0.02〜0.1重量部含有させ、赤ぶどう(赤ワイン)を想起させる鮮やかな赤色としたことを特徴とする食用油である。
ぶどう種子油に赤ぶどう葉抽出物を含有させることにより、より多くのポリフェノールを含有させることができる。紅麹色素を含有させることにより、赤ぶどう(赤ワイン)を想起させる鮮やかな赤色を発色させることができ、色調を良好なものをすることができる。そして調理の際に赤ぶどう(赤ワイン)調の赤色を楽しみながら、多量のポリフェノールが付加された料理を提供することが可能になる。赤ぶどう葉抽出物及び紅麹色素を上記配合にすることで、同容量の従来の種子油に比べて、ポリフェノール含有量を0.05〜0.1%増加させることができ、また、赤ぶどうを想起させる鮮やかな赤色を良好に発色させることができる。
ぶどう種子油により多くのポリフェノールを含有させるために、ぶどうの根、葉、樹皮、茎、果実等から抽出してもよいが、特に、赤ぶどう葉から抽出される抽出物が好ましい。赤ぶどう葉から抽出される抽出物には、ポリフェノールが多く含まれており、中でもアントシアニン、トランスリスベラトロール、カテキン類等が豊富に含まれており、特に、紅葉した赤ぶどう葉中には、アントシアニンの濃度が高いからである。
以下、本発明に係る食用油の試験例及び実施例に基づいて説明する。
フランス産のぶどう種子油500gに、Flachsmann社製造の赤ぶどう葉乾燥エキス0.05gを加えたものに、紅麹色素その他の各種色素を表1に示すような割合で添加して色調を調べた。
フランス産のぶどう種子油500gに、Flachsmann社製造の赤ぶどう葉乾燥エキス0.05g、ヤエガキ醗酵技研社製造のハイムーンレッドMII0.05gを加えて攪拌した。その結果、本発明に係る食用油100g中、コレステロール0%、ビタミンE17.6g、アントシアニン1.4g、リノール酸66.7g含有していることが分かった。また、同容量の従来のぶどう種子油に比べて、ポリフェノール含有量を0.07%増加させることができ、風味も良好で、かつ赤ぶどう(赤ワイン)を想起させる鮮やかな赤色を発色させることができた。

- ぶどう種子油100重量部に対し、赤ぶどう葉抽出物を0.02〜0.1重量部、紅麹色素を0.02〜0.1重量部含有させ、赤ぶどう(赤ワイン)を想起させる鮮やかな赤色としたことを特徴とする食用油。
