Description
ノンアルコール炭酸飲料の調製
一方がスクロース、その他がスクロースの完全な代用品としてグルコースシロップおよび分枝状マルトデキストリンを含むノンアルコール炭酸飲料を調製する。

〔実施例2〕
飲料中の分枝状マルトデキストリンの安定性を評価するために、フラクトオリゴ糖(ACTILIGHT 950PもしくはRAFTILOSE P35)または本発明による分枝状マルトデキストリンのどちらかを含有する溶液を異なるpH値で調製する。
〔実施例3〕
水素添加されたまたはされていない本発明の分枝マルトデキストリンを含む果物ジュースを調製し、これを74℃で17分間の殺菌処理にかける。分枝状マルトデキストリンを含まない対照、およびフラクトオリゴ糖を含む対照も調製する。処理の前と後、ならびに貯蔵後の中身を比較する。果物ジュースはすべてpH3.8である。
〔実施例4〕
以下のプロトコルに従い、濃縮トマトスープ(摂取するためには50%希釈する必要がある)を調製する。本発明によるスープは、実施例1に記載の分枝状マルトデキストリンで強化されている。比較するために、標準のマルトデキストリン(GLUCIDEX(登録商標) 6)またはフラクトオリゴ糖(RAFTILOSE(登録商標) P95)のいずれかを含むが、同じレシピに基づいたスープを調製する。スープのpHは4.2である。
KENWOOD製ミキサーのボールの中で、油、90℃の水、乳化剤のCLEARGUM(登録商標) CO01、およびホエーを最速で10分間混合する。

Claims (15)
- 酸性pHを有し、滅菌もしくは殺菌された繊維強化低カロリー飲料であって、15乃至35%の1→6グルコシド結合を有し、還元糖含有量が20%未満であり、多分子性指数が5未満であり、数平均分子量Mnが多くとも4500g/molに等しい分枝状マルトデキストリンを、1リットル当たり乾燥重量で1.5〜90g含むこと、並びに酸性pHおよび/または熱に安定であることを特徴とする繊維強化低カロリー飲料。
- 前記分枝状マルトデキストリンが、2%乃至5%の還元糖含有量を有し、数平均分子量Mnが2000g/mol乃至3000g/molであることを特徴とする、請求項1に記載の繊維強化低カロリー飲料。
- 前記分枝状マルトデキストリンの全部または一部が水素添加されていることを特徴とする、請求項1または2に記載の繊維強化低カロリー飲料。
- アスパルテーム、アリテーム、ネオテーム、アセスルファムK、サッカリン、チクロ、スクラロース、ステビオサイド、およびネオヘスペリジンからなる群から、単独または混合物として選択された強力甘味料を含むことを特徴とする、請求項1から3のいずれか一項に記載の繊維強化低カロリー飲料。
- 前記強力甘味料が0.01〜1.0g/lの量で存在していることを特徴とする、請求項1から4のいずれか一項に記載の、繊維強化低カロリー飲料。
- クエン酸、リン酸、もしくはアスコルビン酸を単独でまたは混合物として、及び安息香酸ナトリウム、および香味料をさらに含むことを特徴とする、請求項1から5のいずれか一項に記載の繊維強化低カロリー飲料。
- 15%乃至35%の1→6グルコシド結合を有し、還元糖含有量が20%未満であり、多分子性指数が5未満であり、かつ数平均分子量Mnが多くとも4500g/molに等しい分枝状マルトデキストリンの、酸性pHを有し、滅菌もしくは殺菌された繊維強化低カロリー飲料中における糖類のすべてまたは一部に代用するための使用。
- 飲料1リットル当たり、乾燥物ベースで、1.5乃至90g、好ましくは5乃至90gの量で、前記分枝状マルトデキストリンを飲料に導入することを特徴とする、請求項7に記載の使用。
- 酸性pHを有し、滅菌もしくは殺菌された繊維強化飲料であって、15%乃至35%の1→6グリコシド結合を有し、還元糖含有量が20%未満であり、多分子性指数が5未満であり、かつ数平均分子量Mnが多くとも4500g/mol、好ましくは2000g/mol乃至3000g/molである分枝状マルトデキストリンを、1リットル当たり乾燥重量で1.5〜90g含み、酸性pHおよび/または熱に安定であることを特徴とする繊維強化飲料。
- 前記分枝状マルトデキストリンの全部または一部が水素添加されていることを特徴とする請求項9に記載の繊維強化飲料。
- グルコース、フルクトース、キシロース、ラクツロース、エリトロース、マルチトール、キシリトール、エリスリトール、イソマルト、および難消化性デキストリンからなる群から選択された1種または複数の化合物との液体混合物の形で、前記分枝状マルトデキストリンの全部または一部を導入することを特徴とする、請求項1から6、9、及び10のいずれか一項に記載の繊維強化飲料。
- 酸性pHを有し、滅菌もしくは殺菌された繊維強化スープであって、1→6グリコシド結合が15%乃至35%であり、還元糖含有量が20%未満であり、多分子性指数が5未満であり、かつ数平均分子量Mnが多くとも4500g/mol、好ましくは2000g/mol乃至3000g/molである分枝状マルトデキストリンを1乃至30重量%、好ましくは1乃至15重量%含むこと、並びに酸性pHおよび/または熱に安定であることを特徴とする繊維強化スープ。
- 15%乃至35%の1→6グルコシド結合を有し、還元糖含有量が20%未満であり、多分子性指数が5未満であり、かつ数平均分子量Mnが多くとも4500g/molに等しい分枝状マルトデキストリンと強力甘味料との混合物の、酸性pHを有し、滅菌もしくは殺菌された繊維強化低カロリー飲料中における糖類のすべてまたは一部に代用するための使用。
- 飲料1リットル当たり、乾燥物ベースで、1.5乃至90g、好ましくは5乃至90gの量で、前記分枝状マルトデキストリンを飲料に導入することを特徴とする、請求項13に記載の使用。
- 前記強力甘味料が、アスパルテーム、アリテーム、ネオテーム、アセスルファムK、サッカリン、チクロ、スクラロース、ステビオサイド、およびネオヘスペリジンからなる群から、単独または混合物として選択されることを特徴とする、請求項13または14に記載の使用。
