yler)No.6メッシュ)へ搬送し、且つ大豆を2400rpmでスラリーになるまで粉砕する。その後、スラリーを80度で30分間継続的に加熱して、トリプシンインヒビタ、リポキシゲナーゼ、大豆凝集素、及びフィチン酸の活性を徐々に低減させ、且つ大豆の単一細胞を容易に分離させるために、ジャケット付き加熱板6を使用する。次に、スラリーを3000リットル/時ポンプで循環させた後に、外殻、核、胚軸及び子葉を含む大豆の全成分を所定の大きさの顆粒に粉砕するために、第2粉砕機2(タイラーNo.48メッシュ、3600rpm)を使用する。続いて、スプレー乾燥を待つために、第2処理槽3内における粉砕された大豆スラリーの温度を70〜80度に維持する。大豆スラリーを440キログラム/時の蒸発速度で283キログラムの重さの粉末に乾燥するために、スプレー乾燥機(図示なし)を使用する。完成後の製品は未だ2〜3パーセントの水分を含んでいる。最後に、粉末を27度で冷却し、且つその粉末を袋毎9キログラム(20ポンド)となるように、アルミニウムの袋で包装する。豆加工の後に、第1処理槽1及び第2処理槽3を洗浄及び滅菌するために、それらの槽内部に噴霧するスプレー装置8へ、洗浄及び滅菌作用を備えた温水槽5の水を送る。
Claims (17)
- 豆加工装置であって、
第1粉砕機を含む第1処理槽と、該第1処理槽は豆類を入れ、且つ該豆類を浸水、調理及び粉砕するためのものであり、
前記第1処理槽で粉砕された前記豆類の微細粉砕に適用される第2粉砕機と、
前記第2粉砕機に連結されると共に、前記粉砕された豆類の豆製品を前記第2粉砕機から受け取るための保持槽として適用される第2処理槽と、
気密自動加工システムを形成するべく、前記第1処理槽及び前記第2粉砕機を連結する結合管と
を含むことを特徴とする装置。 - 前記豆類の細胞組織を柔らかくする時間を短縮するために、水を予熱してから該水を前記第1処理槽へ送り、且つ該記第1処理槽及び前記第2処理槽の温度を維持する温水槽を更に含むことを特徴とする請求項1に記載の装置。
- 前記温水槽は、洗浄及び滅菌を目的として、前記第1処理槽及び前記第2処理槽の内部に据え付けられるスプレー装置によって、該第1処理槽及び該第2処理槽へ噴霧するように、前記製造工程の完了後に適用される洗浄滅菌試薬を更に含むことを特徴とする請求項2に記載の装置。
- 前記第1処理槽には、該第1処理槽内の豆類を予熱するために、ジャケット付き加熱板が装備されることを特徴とする請求項1に記載の装置。
- 前記第1処理槽の底部には更にポンプが装備されており、該ポンプは前記豆類を該第1処理槽の底部から該処理槽の上部まで循環させることを特徴とする請求項1に記載の装置。
- 前記第1処理槽には攪拌機が装備されており、該攪拌機は前記豆類が該第1処理槽で加熱調理されている間に攪拌するために使用されることを特徴とする請求項1に記載の装置。
- 前記第1粉砕機は前記調理された豆類をスラリーになるまで一次粉砕するために、前記第1処理槽の底部に据え付けられることを特徴とする請求項1に記載の装置。
- 前記第2処理槽は更に、該第2処理槽の内部で前記豆類を攪拌する攪拌機と、該第2処理槽の内部において該豆類の適切な温度を維持するジャケット付き加熱板を含むことを特徴とする請求項1に記載の装置。
- 前記豆類は大豆であることを特徴とする請求項1に記載の装置。
- 請求項1に記載の装置と共に適用される豆加工方法であって、
(a) 豆類を第1処理槽に入れる工程と、
(b) 前記豆類の浸水、加熱調理及び一次粉砕工程を実行するために、適切な量の水を前記第1処理槽に加える工程と、
(c)前記一次粉砕させられた豆類を、微細粉砕用第2粉砕機へ結合管を介して移送する工程と、
(d) 前記微細粉砕された豆類を攪拌用第2処理槽へ導き、統合された単一豆細胞壁を備えた豆製品が得られる工程と
を含むことを特徴とする方法。 - 工程(b)の前記粉砕工程は、前記第1処理槽の前記第1粉砕機によって行われることを
特徴とする請求項10に記載の方法。 - 工程(b)の前記加熱調理工程は、70〜100度の温度で3〜6時間行われることを特徴とする請求項10に記載の方法。
- 液状豆製品を粉末状製品になるまで乾燥させるスプレー乾燥工程を更に含むことを特徴とする請求項10に記載の方法。
- 前記豆製品製造工程の完了後に適用され、洗浄及び滅菌を目的として、洗浄滅菌試薬が入った前記温水を前記第1処理槽及び前記第2処理槽に噴霧するCIP工程を更に含むことを特徴とする請求項10に記載の方法。
- 前記第1処理槽及び前記第2処理槽には攪拌機が装備されており、該攪拌機は該槽内で前記豆類を攪拌するために使用されることを特徴とする請求項10に記載の方法。
- 工程(d)の前記豆製品は統合された単一豆細胞壁を含むことを特徴とする請求項10に記載の方法。
- 前記豆は大豆であることを特徴とする請求項10に記載の方法。
