キチンはカニ、エビ等の甲殻類の甲皮等、昆虫の甲殻、キノコ、糸状菌等の細胞壁に含まれる食物繊維で、保水性を有することから便通改善効果を示す。また、キトサンはキチンをさらにアルカリ処理することで脱アセチル化を行い得られる物質で、コレステロール調整機能、血圧上昇抑制機能、糞便中の有害物質濃度低減作用など様々な生理機能を有する食物繊維であり、キチンは食物繊維源として、キトサンは生活習慣病を予防する機能性食材として食品分野、特に手軽に摂取できる錠剤、ソフトカプセル、顆粒などのいわゆる健康食品に加工されることが多い。

キチン又はキトサンは工業的にはカニ、エビ等の甲殻類の甲皮等から製造されるが、得られたキチン、キトサンは嵩比重が小さく、粉体流動性が悪いため錠剤、顆粒等には加工しにくく、油分散性が悪いためソフトカプセルに充填する量が限られる。

【発明が解決しようとする課題】
しかしながら、水分と接触させた後そのまま棚式乾燥をする場合、嵩比重が0.20g/ml程度にしか改善されない。混合機能を有する乾燥機すなわち、ナウター乾燥機やコニカル乾燥機、スクリュー式乾燥機は嵩比重を0.20g/ml以上にすることが可能であるが、広い設置場所が必要であることに加え、機器の価格も高価であり、一般の健康食品製造工場では実施が難しい。
これらの事から、一般の健康食品製造工場で製造する事が可能で安価なキチン粉末又は顆粒又はキトサン粉末又は顆粒の製造方法が望まれていた。
本発明の目的は、キチン粉末又はキトサン粉末の嵩比重、粉体流動性、油分散性を改善する方法を提供することにある。

そこで本発明者らは、種々検討した結果、含水キチン粉末又は含水キトサン粉末に回転運動を与えた後に乾燥することにより嵩比重が0.25g/ml以上となり、かつ粉体流動性や油分散性が改善されることを見出した。

(1)含水キチン粉末又は含水キトサン粉末に回転運動を与えた後、乾燥する事を特徴とする物性の改良されたキチン粉末又は顆粒又はキトサン粉末又は顆粒の製造方法、
(2)含水キチン粉末又は含水キトサン粉末の含水率が20%から45%の範囲である(1)記載の方法
(3)含水キチン粉末又は含水キトサン粉末に回転運動を与える時間が1〜60分間である(1)又は(2)記載の方法
(4)含水キチン粉末又は含水キトサン粉末が45%を超える含水量のキチン粉末又はキトサン粉末を部分乾燥して得られたものである(2)記載の方法
(5)20%を超えて45%までの含水量のキチン粉末又はキトサン粉末を水分量が20%から45%未満になるように部分乾燥し、回転運動を与えた後、更に乾燥する事を特徴とするキチン粉末又は顆粒又はキトサン粉末又は顆粒の製造方法

【発明の実施の形態】
本発明で用いられるキチン、キトサンの起源は海老、蟹、シャコ、イカ等、特に制限はなく、粉末の平均粒子径は、300μm以下の粉末であれば何れでも良いが、好ましくは30〜180μmである。

キチン粉末又はキトサン粉末に含まれる水としては、工業用水、水道水、ミネラル水、純水等、水であれば如何なる水であっても良い。又、水は蒸気、氷結水等に加工して用いても良い。又、含水溶媒であってもよく、その溶媒の種類としては、例えば、アセトン、メタノ−ル、エチルアルコール等の水溶性溶媒が挙げられ、キチン、キトサンを溶解しないものであれば何れでもよい。又、キチン粉末又はキトサン粉末の製造の際に得られる未乾燥の含水キチン粉末又は含水キトサン粉末をそのまま用いてもよい。

また、水にメチルセルロース、アラビアガム、糊化デンプンなどの結着剤を溶解した後、これをキチン粉末又はキトサン粉末に加え均一に混合して使用する事により、打錠用に顆粒を製造する事もでき、粉末を製造する事もできる。

本発明で含水キチン粉末又は含水キトサン粉末に含まれる水の量としては、含水キチン粉末又は含水キトサン粉末の全体重量に対して20%から45%の範囲が好ましく、より好ましくは35%から45%の範囲である。また、含水率が45%を超えるキチン粉末又はキトサン粉末を水分が20%から45%の範囲まで部分乾燥、又は、含水率が20%を超えて45%までのキチン粉末又はキトサン粉末を水分量が20%から45%未満になるように部分乾燥した後、取り出し、混合機で回転運動を与えた後に、更に乾燥を行っても良いし、回転運動を与えた後、別の乾燥方法によって再び乾燥を再開する事もできる。

回転運動を与える方法としては特に制限はないが、V型混合機、混合パン、リボンミキサー、ナウター混合機、コニカル混合機等の粉体混合機を使用する事が好ましく、減圧状態で回転運動を与える事もでき、少量であればビニール袋に空気と共に封入し手で混合しながら回転運動を行ってもよい。また、回転を与える時の温度は特に制限はなく、また回転運動を行う時間は通常1分間以上であれば良く、好ましくは1〜60分間、より好ましくは1〜30分間、特に好ましくは5〜10分間である。

本発明に用いる乾燥は、自然乾燥や天日乾燥、または乾燥機を使用する事ができる。乾燥機を使用する場合は棚式乾燥機、透過式乾燥機、凍結乾燥機、減圧乾燥機等、静置状態で乾燥する乾燥機であれば如何なる乾燥機を用いてもよく、一般の健康食品製造工場に設置されている乾燥機も使用できる。

以下に実施例を挙げて本発明を具体的に説明するが、本発明はこれらに限定されるものではない。
実施例1
50メッシュの篩いを全通するように粉砕したキチン粉末(嵩比重0.195g/ml)48kgに水34kgを加えてスピードニーダーで5分間練合した後、80℃の棚式乾燥機で乾燥減量が38%になるまで乾燥し、混合パンに移しかえて15分間、15rpmで回転運動を与えた後、再び80℃で乾燥することで、キチン粉末の嵩比重を0.195g/mlから0.267g/mlに改善した。
