Abstract

PURPOSE:To obtain powdered lactic acid and/or lactic acid salt excellent in fluidity and free from lump even after storage by adding powdered cellulose into an aqueous solution of lactic acid, sodium lactate and potassium lactate followed by drying dehydration. CONSTITUTION:An aqueous solution of at least one selected from lactic acid, sodium lactate and potassium lactate is incorporated with powdered cellulose of 0.5-10 times in terms of solid and stirred to obtain homogeneously damped powder. The obtained powder is subjected to a drying dehydration process at 105-110 deg.C and subsequently to pulverization and sieving processes to obtain powdered lactic acid, sodium lactate or potassium lactate. The obtained powder has dry feeling and excellent fluidity. This product can keep the dry state even after one month storage at 30 deg.C at 60% humidity and can be easily mixed with another powdered material. Further, this can exhibit humectant effect and tasting effect when added into a prepared mix such as a bread mix, cake mix and doughnut mix or a powdered seasoning.
