本発明の係るデキストリン脂肪酸エステルは、デンプンの加水分解物であるデキストリンと高級脂肪酸とのエステル化合物であり液状油のゲル化剤として良く知られている。それらの中で安定性等の面よりパルミチン酸デキストリンが好ましい。デキストリンとしては平均重合度10〜50の物で、高級脂肪酸が炭素数12〜22の物が好ましく、脂肪酸の置換度はデキストリンのグルコース単位当り1.0以上の物が好ましい。デキストリン脂肪酸エステルは容易に入手可能であり、例えば、千葉製粉社よりレオパールKE、レオパールKLとして市販されている。
