本発明は、卵黄液や卵白液等を湯中で加熱し凝固させた含水加熱凝固卵の製造装置に係わり、特にこれを大量生産するに適した含水加熱凝固卵の製造装置に関する。

【従来の技術】
卵を加熱処理する技法には、一般家庭においては、熱湯中に卵黄液や卵白液(以下、たんに卵液という)等を鍋の熱湯中に入れて、これをかき混ぜることによって所定量の含水加熱凝固卵を製することが行われている。
また、一方殻付の生卵を熱湯中に搬送しゆで卵を大量に製造する卵加熱装置は実公昭51−25584号公報等で公知である。

【発明が解決しようとする課題】
しかしながら、上記家庭用の技法では品質一定の含水加熱凝固卵を短時間に大量生産することが困難であり、また、実公昭51−25584号記載の装置中の大型熱湯槽を用いて、この熱湯中で卵液を処理し含水加熱凝固卵を得ようとすると、卵液は団子状や偏平状など種々の形状に熱凝固するのみならず、ゴム状に凝固する部分も混在するものとなり、品質一定のものとして大量生産することが出来ないという問題がある。

【課題を解決するための手段】
本発明は上記従来の技術が有する問題点を解決することを課題として、卵液を品質一定の含水加熱凝固卵として大量生産することができるようにするため、一端の上方に卵液供給手段を配設してある加熱用水槽の熱湯中の上層部を多数の収容籠または仕切部材を支持装架した無端のチェンコンベアを通過させ熱湯中の下層部に配設された泡発生装置の気泡により熱湯中に供給された卵液が均一浮上し偏平状態となった熱凝固卵を無端チェンコンベアにより回収することにより課題の解決を図ったものである。

好ましくは、前記収容籠は、水透過可能に多孔材または網材で形成するのがよく、また前記仕切部材は櫛板状に形成することが望ましい。一方、泡発生装置は熱湯を加熱するための多孔を穿った蒸気加熱管や、無孔の蒸気加熱管(蛇管)として設けることにより、加熱管の多孔から排出される蒸気または蛇管の表面から発生する気泡によって、卵液は均一に熱湯中の上層部に拡がり浮上した後、前記無端コンベアで連続して搬送回収できるので好ましい。

【発明の実施の形態】
以下、本発明を図面に示す実施形態を参照して説明する。
図1は本発明の一実施例の概要を断面図で示すもので、架台1に配設された熱湯槽2はその一端側に熱湯が溢流可能な排水ソケット5を配設した溢流槽4を配設してある。また、収容籠6を支持具12’と支持台19を介して支持装架された無端チェンコンベア12が駆動モーター11とこれに連動する駆動スプロケット9、下部スプロケット16、上部スプロケットに懸架され、熱湯槽2の上層部と熱湯槽2の下方を矢印A方向に回転駆動されるようになっている。

図4に搬送チェン部の拡大斜視図が示されているように、上記収容籠6はパンチングメタルとしての多孔材から形成されており、その壁面の細孔20によって熱湯槽2中の熱湯の透過を自由にして籠支持台19に止具6’により固持されている。

前記熱湯槽2の一端の上方には、卵液パイプ21が配設され、卵液パイプ21の卵液の出口には、図示しない傾斜揺動する受皿等の受渡し手段が配設され、これによって卵液が熱湯中の収容籠6に均等に落としこまれるようにされている。

また、熱湯槽2内の下層には、ステンレス鋼材からなる無孔の蒸気パイプ13が、コンベア12と直交する方向に蛇管状に配設されており、蒸気パイプ13の表面は微細な気泡が発生可能なように研磨せずに粗鋼のままとされている。
図5は、本発明のその他の実施例を断面図として示したもので、先の実施例の収容籠6に代えてチェンコンベア12に仕切部材22を支持装架し、泡発生装置13に代えて孔付の蒸気パイプ13’としたものである。

次に作用を説明する。
液卵パイプ21により、卵液は熱湯槽2中の収容籠6、6、6・・・・・内または仕切部材22、22、22・・・・・間に供される卵液は熱湯槽2の下層に配設してある泡発生装置(蒸気パイプ)13からの気泡または蒸気泡によって、上層部へ均一に拡散浮上させられる。この浮上した卵液は矢印A方向に回転駆動するチェンコンベア12の収容籠6または仕切部材22によって、均等に区分され熱湯槽2の他端の回収域まで加熱搬送され熱湯槽2の外側に配置した多孔の回収籠23に取り出し回収される。

【発明の効果】
以上説明したように本発明によれば、熱湯槽に投入した卵液を気泡により上層に拡散浮上させ、これをチェンコンベアに支持装架した収容籠または仕切部材により、熱湯槽中を搬送し回収するので、熱湯中で卵液がゴム塊状に凝固することがなく、品質一定の含水加熱凝固卵として大量生産するこができる。
また、構造が簡単であり、製造終了後の装置の洗滌・清掃を容易にできる。

尚、本発明装置により製した含水加熱凝固卵は、吸物具材としてそのまま用いることができるのみならず、ダシ汁等と適宜に混合し冷蔵保管することにより、卵丼等の丼物の基材としていつでもそのまま大量に供することができる。
