て、形状及び海苔シ−トによる巻包状態が良く、見栄え
の良い商品価値の高い手巻風寿司を確実に、しかも廉価
に製造することができる。

断された、その一定量の米飯上面を押圧して所定方向に
凹状溝を成形する米飯成形部材を、前記米飯の移送途中
の上部に昇降軸によって昇降動自在に配設したことを特
徴とする手巻風寿司製造装置における米飯の予備成形機
構。
