一方、成分(b)の含有量の上限は、本実施形態の飲料用組成物全体に対して、液状化を抑制し、シャーベット感を保持する点から、30w/v%以下であることが好ましく、やわらかいシャーベット状態を得る点からは、25w/v%以下であることがより好ましく、シャリシャリ感を得る点からは15w/v%以下であることがさらに好ましい。

(糖類)

上記液糖としては、特に限定されないが、例えば、異性化糖、転化糖、水あめ、蜂蜜、およびオリゴ糖などの中から選ばれる1種または2種以上が挙げられ、より好ましくは、果糖ぶどう糖液糖、ぶどう糖果糖液糖、および高果糖液糖が挙げられる。なお、本実施形態の飲料組成物は、高甘味度甘味料を含まないものとしてもよい。

なかでも、氷冷感との相性がよく、よりおいしく飲用する点から、柑橘類果汁を含むことが好ましく、レモン果汁であることがより好ましい。

エキス分とは、温度十五度の時において原容量百立方センチメートル中に含有する不揮発性成分のグラム数をいう。
なお、アルコール飲料のエキス分は、例えば、日本国の国税庁所定分析法に準拠して比重(日本酒度)及びアルコール度を測定して算出することができる。

具体的には、例えば、ペットボトル、アルミ缶、スチール缶が挙げられる。また、容器はキャップ状、または栓状の蓋つきであってもよく、蓋無しの使い切りタイプであってもよい。
なかでも、凍結による膨張・変形に対する強度、取扱性等の観点からは、容器はアルミ缶、スチール缶であることが好ましく、またさらに、取り出しやすさ等の点からフルオープンエンド缶であることが好ましい。
また、シャーベット状が得られやすくなる点からは、ペットボトルであることが好ましい。通常、ペットボトルは開口部が徐々に狭くなる形状であるため、開栓した際に、炭酸ガスの発泡による液膨脹の際、容器からの圧が氷塊により加わりやすくなるとともに、氷塊が粉砕されながら吹き上がるため、よりシャーベット状に変化しやすい。

Moreover, a PET bottle is preferable because it makes it easier to obtain a sherbet-like liquid. Normally, a PET bottle has a shape in which the opening gradually narrows, so that when the bottle is opened, the pressure from the container is more likely to be applied to the ice block when the liquid expands due to foaming of carbon dioxide gas, and the ice block is blown up while being crushed, which makes it easier to change into a sherbet-like liquid.

これにより、炭酸ガスの噴出により良好なシャーベット状態が得られる容器詰めシャーベット状飲料用組成物が得られる。
混合方法は特に限定されず公知の方法を用いることができる。また、容器詰め方法も特に限定されず公知の方法を用いることができる。
なお、飲料用組成物に含まれる各成分およびその含有量等は上記飲料用組成物と同様である。

容器は、サイズ204径、350ml容量、アルミ製のフルオープン缶(東洋製罐社製)とした。
各表に記載の値となるように各原料を混合して飲料用組成物を調製し、その後、用意した容器(缶)に充填し、各表に記載の炭酸ガス圧となるように炭酸ガスを封入し、容器詰めした。これを5点用意した。

Five such beverage compositions were prepared.
(2)官能評価
容器詰め飲料用組成物を-20℃の冷凍庫で24時間保存し、凍結させた後、訓練した識別能力のある技術者による官能試験を実施した。
具体的には、5名の技術者が各容器詰め飲料用組成物を開封し、炭酸ガスの発泡が収めった後直ちに、金属製のスプーンを飲料用組成物に刺し込み、氷塊の破砕の程度について以下の基準にしたがい5段階で評価した。各評価の平均値を算出し、結果とした。

3:半凍結状態、スプーンがスムーズに刺せる、柔らかいシャーベット状態(氷塊が容易に破砕できた)
2:わずかにのみ凍結しており、液体に近い状態(氷塊が破砕され、わずかに残っていた)
1:未凍結の液体状態(氷塊が破砕され溶けていた)

表1に示す値となるように、各原料を混合し、上記(1)の通りにして容器詰め飲料用組成物を得た。得られた容器詰め飲料用組成物について、上記(2)の官能評価を行った。結果を表1に示す。
