本発明の第3の発明は、さらに、下記の条件(e)の条件を満たす、第1の発明又は第2の発明に記載の電子レンジ加熱ベーカリー食品用水中油型乳化物である。
(e)水分活性が0.90以下である。
本発明の第4の発明は、前記電子レンジ加熱ベーカリー食品用水中油型乳化物が、電子レンジ加熱ベーカリー食品の食感劣化抑制剤である、第1の発明~第3の発明のいずれか1つの発明に記載の電子レンジ加熱ベーカリー食品用水中油型乳化物である。
本発明の第5の発明は、第1の発明~第4の発明のいずれか1つの発明に記載の電子レンジ加熱ベーカリー食品用水中油型乳化物を、練り込んだ、電子レンジ加熱ベーカリー食品生地である。
本発明の第6の発明は、第5の発明に記載の電子レンジ加熱ベーカリー食品生地を、焼成した、電子レンジ加熱ベーカリー食品である。
