Abstract
Description
芳香組成物原液を調製した。Table 1(表1)に、4つのそのような芳香組成物原液(試料1から4)中に存在する芳香化合物をまとめる。各芳香組成物原液における化合物(含まれる場合)の濃度は、以下の通りであった:メタノール(12900ppm)、E-2-ヘキセナール(6280ppm)、リナロール(3170ppm)、Z-3-ヘキセノール(1070ppm)、E-リナロールオキシド(973ppm)、サリチル酸メチル(833ppm)、ヘキサナール(509ppm)、E-2-ヘキセノール(492ppm)、アセトアルデヒド(365ppm)、Z-2-ペンテン-1-オール(344ppm)、1-ペンテン-3-オール(251ppm)、1-ペンテン-3-オン(107ppm)。
対照2: 陰性対照(すなわち、2%の芳香組成物を含む非スパイク培地)、及び
対照3: 無菌対照(すなわち、いかなる芳香組成物も含まない非スパイク培地)。
試料5における6つの化合物の抗真菌特性を更に調べた。Table 3(表3)に、これらの化合物を1つ又は2つ含有する、更なる15の芳香組成物原液(試料AからO)をまとめる。各芳香組成物原液における化合物(含まれる場合)の濃度は、以下の通りであった:メタノール(12900ppm)、E-2-ヘキセナール(6280ppm)、E-リナロールオキシド(973ppm)、サリチル酸メチル(833ppm)、ヘキサナール(509ppm)、E-2-ヘキセノール(492ppm)。

Claims (15)
- 防腐組成物を含む、レディ・トゥ・ドリンク飲料又は飲料濃縮物である紅茶製品であって、前記防腐組成物が、ヘキサナール、E-2-ヘキセナール、E-2-ヘキセノール、E-リナロールオキシド、メタノール及びサリチル酸メチルから選択される少なくとも3つの化合物を含む、紅茶製品。
- 前記防腐組成物が、E-2-ヘキセナールと、ヘキサナール、E-2-ヘキセノール、E-リナロールオキシド、メタノール及びサリチル酸メチルから選択される少なくとも2つの化合物とを含む、請求項1に記載の紅茶製品。
- 前記防腐組成物が、ヘキサナール、E-2-ヘキセナール、E-2-ヘキセノール、E-リナロールオキシド、メタノール及びサリチル酸メチルから選択される少なくとも4つの化合物を含む、請求項1に記載の紅茶製品。
- 前記紅茶製品中の前記防腐組成物の総濃度が、10ppmから10000ppm、好ましくは35ppmから5000ppmである、請求項1から3のいずれか一項に記載の紅茶製品。
- 0.05質量%から3質量%の紅茶固形物を含む、請求項1から4のいずれか一項に記載の紅茶製品。
- 60ppm未満のリナロールを含む、請求項1から5のいずれか一項に記載の紅茶製品。
- 2から6、好ましくは2から4のpHを有する、請求項1から6のいずれか一項に記載の紅茶製品。
- 200ppm未満のソルベート、好ましくは100ppm未満のソルベートを含む、請求項1から7のいずれか一項に記載の紅茶製品。
- 100ppm未満のベンゾエート、好ましくは50ppm未満のベンゾエートを含む、請求項1から8のいずれ一項に記載の紅茶製品。
- 天然若しくは合成のフルーツフレーバー及び/又は天然若しくは合成のハーブフレーバーを追加的に含む、請求項1から9のいずれか一項に記載の紅茶製品。
- 25質量%から75質量%の水を含む飲料濃縮物である、請求項1から10のいずれか一項に記載の紅茶製品。
- バッグインボックス容器に包装されている、請求項11に記載の紅茶製品。
- 保存紅茶製品を調製するための方法であって、レディ・トゥ・ドリンク飲料又は飲料濃縮物である紅茶製品に防腐組成物を添加する工程を含み、前記防腐組成物が、ヘキサナール、E-2-ヘキセナール、E-2-ヘキセノール、E-リナロールオキシド、メタノール及びサリチル酸メチルから選択される少なくとも3つの化合物を含む、方法。
- 前記保存紅茶製品を包装する追加の工程を含む、請求項13に記載の方法。
- 前記保存紅茶製品を低温殺菌又は滅菌する追加の工程を含む、請求項13又は14に記載の方法。
