〔ひび割れの評価〕
表1〜2に示された配合のチョコレートを、通常のチョコレートの製造方法(混合、微粒化、精練、冷却)で製造した(なお、表中の乳化剤A含有量は、グリセリンオレイン酸エステルとジグリセリンオレイン酸エステルの合計含有量のことである。)。各チョコレートを完全に融解させて、45℃に調温した。45℃に調温された各チョコレートをスナック菓子(中空を有する棒状のコーンパフ)に被覆した。各チョコレートを7℃で冷却固化させることで、各チョコレートが被覆されたスナック菓子を製造した。なお、植物油脂は、ラウリン系油脂の含有量が88.9質量%の植物油脂を使用した。また、ラウリン系油脂は、構成脂肪酸中のラウリン酸含量が45.8質量%の油脂を使用した。また、全てのチョコレートは、チョコレートに含まれる油脂中のラウリン系油脂の含有量が79.4質量%だった。また、全てのチョコレートは、水分の含有量が3質量%以下だった。
各チョコレートが被覆されたスナック菓子を15℃及び20℃で5週間保存した。保存終了後、目視でひび割れの有無を確認する。下記評価基準で評価し、◎又は○である場合、ひび割れし難いと判断した。結果を表1〜2に示した。
◎:ひび割れが全くない。
○:ひび割れが少しある。
×:ひび割れが多数ある。

一方、表1、2から分かるように、グリセリンオレイン酸エステル及び/又はジグリセリンオレイン酸エステルを使用せずに製造した比較例のチョコレートは、ひび割れしていた。
