Abstract
【解決手段】加熱殺菌処理の前処理として、50℃以下の温度条件下で50MPa以上200MPa以下の静水圧を対象物に加える高圧処理を施し減圧する減圧処理を施した後、この減圧による静水圧変動が生じた後所定の放置時間が経過した後に、前記減圧処理を施した対象物に、加熱殺菌処理を施す耐熱性芽胞菌の殺菌又は不活化処理方法。

(1)400MPa以上の高い圧力を加える方法
(2)加熱処理の効果を利用して加圧する方法(加圧と加熱を同時に行う方法)
(3)加圧処理の直後に加熱する方法
(4)添加物を加えてpH(水素イオン濃度)を調整して加圧し殺菌効率を高める方法
などが提案されてきた。
(1)必要とする減圧圧力が50MPa以上200MPa以下と低いために、圧力装置が低価格であり、設備コストが低く、低収益の食品加工への適用が可能となる。
Claims (3)
- 加熱殺菌処理の前処理として、50℃以下の温度条件下で50MPa以上200MPa以下の静水圧を対象物に加える高圧処理を施し減圧する減圧処理を施した後、この減圧による静水圧変動が生じた後10分以上経過した後で且つ18時間以上経過する前に、前記減圧処理を施した対象物に、初期温度より50℃〜80℃温度上昇させた少なくとも121℃以下の温度を10分以上維持する前記加熱殺菌処理を施すことを特徴とする耐熱性芽胞菌の殺菌又は不活化処理方法。
- 前記減圧処理後の耐熱性の指標となる芽胞懸濁液の濁度が前記減圧直後の値の60%以下となる時間を放置時間として予め測定により知得し、前記減圧直後から前記放置時間が経過するのを待って、前記加熱殺菌処理を施すことを特徴とする請求項1記載の耐熱性芽胞菌の殺菌又は不活化処理方法。
- 前記対象物は、収穫した農産物,水産物若しくはこれらを加工した加工食品又は動物臓器,血液,動物細胞組織,植物細胞組織若しくは種子としたことを特徴とする請求項1,2のいずれか1項に記載の耐熱性芽胞菌の殺菌又は不活化処理方法。
