Abstract
Description
[0015]用語「動物」は、ヒト、ウシ、イヌ、ウマ、ネコ、ヤギ、オオカミ、ネズミ、ヒツジ、又はブタの動物を含めた、本発明のミルク様飲料組成物の摂取から恩恵を受け得る又はそれを享受し得るいずれかの動物を意味する。
表1に示した配合物を使用して、ミルク様飲料組成物を製造した。896kgの精製水を、Breddo Liquefierで約30℃に加熱した。20.8kgの乳清タンパク質単離物を、680rpmで撹拌しながら温水に添加して、1分間ブレンドした。次いで、溶液を、70℃に加熱した。次いで、35kgの無水乳脂肪及び3.8kgの乳化剤(モノグリセリド及びジグリセリド)を、混合物に注いで2分間ブレンドした。次いで、36.6kgのカゼインナトリウムを、凝集塊の形成を避けるために、680rpmで撹拌しながらBreddo 液化器中の温水にゆっくり添加して、12分間ブレンドを続けた。次いで、残りの乾燥原料(4.5kgのTSPP、1.3kgのジェランガム、並びに1.6kgのビタミン/ミネラルプレミックス)を、液化器中の混合物に添加して、更に5分間ブレンドした。得られたものを、2段階(2500/500PSI)ホモジナイザーにポンプで注入し、ここで、第1段階で、飲料を2500psiに供し、第2段階で、圧力を500psiに下げた。次いで、ホモジナイズしたものを、レトルト処理に適したパッケージ(缶又は瓶)に充填した。パッケージを、約121℃の温度でレトルト処理した。目標の加熱因子Foは、5であった。調理時間は、8〜14分であった。次いで、パッケージを、室温に冷ました。このようなパッケージを、流通及び/又は使用のために準備した。
Claims (20)
- (1)約1〜約10%のカゼイン塩を含有する最終組成物を製造するのに十分な量の1種又は複数種のカゼイン塩、(2)約1〜約10%の乳清タンパク質を含有する最終組成物を製造するのに十分な量の乳清タンパク質、(3)約2〜約10%の1種又は複数種の脂肪を含有する最終組成物を製造するのに十分な量の1種又は複数種の脂肪、(4)約0.01〜約1%の1種又は複数種の親水コロイドを含有する最終組成物を製造するのに十分な量の1種又は複数種の親水コロイド、及び(5)約0.1〜約10%の1種又は複数種の乳化剤を含有する最終組成物を製造するのに十分な量の1種又は複数種の乳化剤の、均質な水性混合物を作るステップと、
前記水性混合物を、約118〜約127℃の温度に加熱し、約8〜約14分間、このような温度に維持するステップと、
前記加熱した水性混合物を、約20〜約35℃の温度に冷却するステップとを含む、ミルク様飲料組成物の製造方法。 - 請求項1に記載の方法に従って製造されたミルク様飲料組成物。
- 前記カゼイン塩が、カゼインナトリウム、カゼインカルシウム、カゼインカリウム、カゼインマグネシウム又はこれらの組合せである、請求項2に記載の組成物。
- 前記カゼイン塩が、カゼインナトリウム、カゼインカルシウム又はこれらの組合せである、請求項2に記載の組成物。
- 前記乳清タンパク質が、乳清タンパク質濃縮物、乳清タンパク質単離物、乳清タンパク質加水分解物又はこれらの組合せである、請求項2に記載の組成物。
- 前記乳清タンパク質が乳清タンパク質単離物である、請求項2に記載の組成物。
- 前記脂肪が、動物若しくは植物由来の水素化脂肪若しくは水素化油又はこれらの組合せである、請求項2に記載の組成物。
- 前記脂肪が、一価不飽和脂肪、多価不飽和脂肪又はこれらの組合せである、請求項2に記載の組成物。
- 前記脂肪が、ラウリン酸、ミリスチン酸、パルミチン酸、ステアリン酸又はこれらの組合せである、請求項2に記載の組成物。
- 前記脂肪が無水乳脂肪である、請求項2に記載の組成物。
- 前記親水コロイドが、寒天、アルギン酸塩、アラビノキシラン、カラギーナン、カルボキシメチルセルロース、セルロース、カードラン、ゼラチン、ジェラン、β−グルカン、グアーガム、アラビアガム、ローカストビーンガム、ペクチン、デンプン、キサンタンガム又はこれらの組合せである、請求項2に記載の組成物。
- 前記乳化剤が、3〜10の範囲で親水性親油性バランス(HLB)を有する任意の乳化剤である、請求項2に記載の組成物。
- 前記乳化剤が、食用の完全水素化植物脂肪から作られる脂肪酸のモノグリセリド及びジグリセリドのジアセチル酒石酸エステル、グリセロール、有機酸又はこれらの組合せである、請求項2に記載の組成物。
- 前記乳化剤が、レシチン及び蒸留モノグリセリドの混合物である、請求項2に記載の組成物。
- 前記混合物は、約50%がレシチンであり50%が蒸留モノグリセリドである、請求項14に記載の組成物。
- 前記乳化剤が、モノグリセリドのジアセチル酒石(酸)エステル及び蒸留モノグリセリドの混合物である、請求項2に記載の組成物。
- 前記混合物は、約50%がモノグリセリドのエステルであり50%が蒸留モノグリセリドである、請求項16に記載の組成物。
- 1種又は複数種の食味増強剤を更に含む、請求項2に記載の組成物。
- 前記食味増強剤がピロリン酸テトラナトリウムである、請求項18に記載の組成物。
- 請求項1に記載の方法に従って製造されたミルク様飲料を、ミルク又はラクトースを含有するその他の飲料の代用品として、動物に投与するステップを含む、乳糖不耐症を起こしやすい又は乳糖不耐症にかかっている動物において、乳糖不耐症によって生じる消化障害を予防又は低減するための方法。
