Abstract
Description
ビタミンB1は、米・小麦胚芽・大豆等の植物性食品や、牛肉・豚肉・鶏レバー・卵・魚等の動物性食品から摂取することができるが、他の食品と比較してとりわけ豚肉に豊富に含まれていることが広く知られている。例えば、豚のヒレ肉には牛肉と比較して約10倍ものビタミンB1が含まれ、豚のヒレ肉100g食することにより、成人の1日の必要量(1.0mg)を摂取することができる。
従って、更に豊富にビタミンB1を含有する豚肉を提供することができれば、ヒトの健康維持・増進に一層寄与することができ、また高ビタミンB1食品としてのイメージの強化により差別化豚肉としての経済的訴求効果も強まると考えられる。
また、本発明は、豚に上記配合飼料を給与することを特徴とする豚肉中のビタミンB1の増加方法により上記課題を解決したものである。
また、本発明は、ビタミンB1を18〜45ppm及びビタミンEを1.5〜11ppm含有することを特徴とするビタミンB1高含有豚肉により上記課題を解決したものである。
ビタミンB1は公知の化合物であり、その入手方法としては、市販品を用いてもよく、また公知の方法に基づき製造することも可能である。
具体的には、α−トコフェロール、β−トコフェロール、γ−トコフェロール、δ−トコフェロール、酢酸dl−α−トコフェロール、リノール酸dl−α−トコフェロール、リノレイン酸dl−α−トコフェロール、ニコチン酸dl−α−トコフェロール、アスコルビン酸dl−α−トコフェロール、コハク酸dl−α−トコフェロール、コハク酸dl−α−トコフェロールカルシウム等を挙げることができる。これらは、単独で又は2種以上を組み合わせて用いることができる。本発明において、ビタミンEとしては、酢酸dl−α−トコフェロールが好ましい。
ビタミンEは公知の化合物であり、その入手方法としては、市販品を用いてもよく、また公知の方法に基づき製造することも可能である。
本発明の配合飼料を給与する豚の種類は、特に限定されず、LWD種、WLD種、ハイブリッド種、バークシャー種等を挙げることができる。
配合飼料については、飼料分析基準収載分析法に従って、「高速液体クロマトグラフ法」により、豚ロース肉については五訂日本食品標準成分表分析マニュアルに従って、「高速液体クロマトグラフ法」により測定した。

供試豚(LWD種、雄、平均体重60kg)各区5頭を用い、表1に示す基礎飼料にビタミンB1(VB1)及びビタミンE(VE)を表2記載の各濃度になるように添加、混合して7〜10週間飼育した。飼料および水の給与は不断給与とした。
各供試豚について、屠殺直後のロース肉中のビタミンB1含有量を測定し、平均を求めた。その結果を示せば表2のとおりである。
表1に示す基礎飼料に、ビタミンB1及びビタミンEを表3記載の各濃度になるように添加、混合して、実施例1と同様にして豚を飼育した。
各供試豚について、屠殺直後のロース肉中のビタミンB1含有量を測定し、平均を求めた。その結果を示せば表3のとおりである。
豚肉中ビタミンB1含量は、飼料中ビタミンB1含量が200ppmの飼料を給与した際にピークに達し、飼料中ビタミンB1濃度を200ppm以上に高めてもそれ以上には増えなかった(試験区14〜15)。
また、豚肉中のビタミンE含量は、飼料中ビタミンE含量が300ppmの飼料を給与した際にピークに達し、飼料中ビタミンE含量を300ppm以上に増やしても、豚肉中ビタミンE含量はそれ以上には増えなかった(試験区11〜13)。
以上のことから、単に飼料中ビタミンB1含量を高めるだけでなく、飼料中50〜500ppmの濃度範囲のビタミンEと組み合わせることで、より効率良く、ビタミンB1高含有豚肉が得られることが確認された。また、飼料中ビタミンB1含量およびビタミンE含量をそれぞれ一定量以上に高めても、豚肉中のビタミンB1含量は一定量以上に高まらないことが確認された。
表1に示す基礎飼料に、ビタミンB1及びビタミンEを表4記載の各濃度になるように添加、混合して、実施例1と同様にして豚を飼育した。飼育期間中、毎日食下量を計測し、平均を求めた。その結果を示せば表4のとおりである。
Claims (4)
- ビタミンB1を10〜200ppm及びビタミンEを50〜500ppm含有することを特徴とする豚用配合飼料。
- 豚に請求項1記載の配合飼料を給与することを特徴とする豚肉中のビタミンB1の増加方法。
- 豚に請求項1記載の配合飼料を給与することを特徴とする豚肉の生産方法。
- ビタミンB1を18〜45ppm及びビタミンEを1.5〜11ppm含有することを特徴とするビタミンB1高含有豚肉。
