食品の油揚げ調理を行うフライヤ装置であって、
油槽と、
当該油槽内の調理油を加熱する加熱手段と、
前記油槽近傍に配され被調理食材を収容する調理籠と、
当該調理籠に設けられ、前記調理籠の上部開口部を開閉することができる蓋と、
前記調理籠を前記油槽内部の調理油内から調理油外の間で自動的に昇降させる昇降装置と、
前記調理籠の昇降動作に伴い前記蓋の開き具合を調節する蓋開度調節手段と、
を備えており、
前記蓋開度調節手段が、
前記蓋に設けられている係合具と、
装置の所要箇所であって前記係合具が昇降動する経路の近傍に設けられている受具と、
を備え、
前記調理籠の昇降動に伴う前記係合具と前記受具の係合又は係合解除によって蓋が開閉する、
