Claims (15)
- 麦芽を回分発酵槽中で発酵させるステップと、その発酵麦芽を遠心分離するステップとを具え、前記遠心分離ステップをディスクスタック遠心分離機によって実行することを特徴とするビールの醸造方法。
- 前記Σ因子と遠心分離ステップの流速との比率が少なくとも400m2hr/hlであることを特徴とする請求項1に記載の方法。
- 前記Σ因子と遠心分離ステップの流速との比率が少なくとも700m2hr/hlであることを特徴とする請求項2に記載の方法。
- 前記Σ因子と遠心分離ステップの流速との比率が少なくとも1000m2hr/hlであることを特徴とする請求項3に記載の方法。
- 前記遠心分離ステップのΣ因子が、少なくとも500hl/hrの各流速に対して、少なくとも500000m2であることを特徴とする請求項4に記載の方法。
- 前記遠心分離ステップ中に、発酵麦芽中に存在する5マイクロメートル未満の平均粒子サイズを有する固形分を少なくとも90パーセント除去することを特徴とする請求項1乃至5のいずれか1項に記載の方法。
- 前記遠心分離ステップ中に、発酵麦芽中に存在する2マイクロメートル未満の平均粒子サイズを有する固形分を少なくとも90パーセント除去することを特徴とする請求項6に記載の方法。
- 遠心分離した発酵麦芽のEBC濁り度が100未満又は好ましくは75未満であることを特徴とする請求項1乃至7のいずれか1項に記載の方法。
- 前記発酵ステップと前記遠心分離ステップとの間にさらなる熟成ステップを有することを特徴とする請求項1乃至8のいずれか1項に記載の方法。
- 前記熟成時間が12時間未満であることを特徴とする請求項9に記載の方法。
- 前記熟成時間が6時間未満であることを特徴とする請求項10に記載の方法。
- 発酵の実質的に直後に前記遠心分離ステップを実行することを特徴とする請求項11に記載の方法。
- 前記熟成ステップにおいて、前記発酵麦芽中に存在する濁り前駆物質と反応する薬剤を用いないことを特徴とする請求項9乃至12のいずれか1項に記載の方法。
- 前記遠心分離ステップにおいて、直列及び/又は並列のディスクスタック遠心分離機を用いることを特徴とする請求項1乃至13のいずれか1項に記載の方法。
- 前記遠心分離ステップを磨き上げるステップをさらに具えることを特徴とする請求項1乃至14のいずれか1項に記載の方法。
