従来の軟鉄製の鍋は、錆を防ぐため、ラッカーなどを主成分とした塗料を塗装してある場合、シリコン塗装をしてある場合、手で剥がせる塗装をしてある場合の3種類があります。ラッカー塗装の場合は、調理に使う前にガスコンロ上でから焼きして塗装膜を取り除く手間が必要となります。その後、カラ焼きし酸化鉄層を作り、油を馴染ませます。シリコン塗装の場合は、調理を重ねるうちに次第に剥がれ落ち、やがては軟鉄の生地表面が露出します。その時点から、ようやく鉄本来の油なじみの特性を発揮し始めますが、それまでにかなりの期間が必要であります。手で剥がせる錆び止め塗装の場合は、完全に被膜を剥がし、カラ焼きし、油を馴染ませます。
