調理用クリーム系ソ−ス(調理用カルボナーラソース)(ソース全量240グラム)
卵黄、チーズ、油脂及び水を以下の表1に示す配合割合で混合し、水分散液を作成した。次いで、作成した水分散液を85度に達温後、85度で10分間加熱した。加熱した水分散液を高圧タイプの均質機(50ないし300kg/平方センチ)を用いることにより均質化処理を行った。
次いで、表1に示す配合割合で得られた均質化処理液と、調味料と、ベーコンと、牛乳と、澱粉と、水を以下の表2に示す配合割合で混合した。得られた混合物を温度85度に到達後、該85度を維持して5分間加熱し、カルボナーラソースを得た。澱粉の量、水の量を調整することによって、乾麺を茹でることが可能な調理用カルボナーラソースとしている。
以上の手法により、調理用カルボナーラソ−スの粘度を5.0ないし20.0cpsとした場合に、直径1.7mm幅の乾麺を、設定出力500Wの電子レンジで10分間加熱することにより、好ましく炊き上げることができた。
ここで、調理用クリーム系ソ−スの粘度が5.0cps未満であると、乾麺を茹でることができるが、水っぽい食感のわるいものであった。
調理用クリーム系ソ−スの粘度が50.0cpsを超えると、乾麺は硬くて、実質的に食せない状態であった。
