次に、前記上層豆腐塊(T3)を反転させて前記切断豆腐塊(T4)の上に被せるように製品容器(T)内に落下収容させることを特徴とする寄せ豆腐製造方法。

前記開閉シャッター(2)の開放により前記原料保持枠(1)内から落下する残存豆腐(T2)を、その落下途中で複数の切断豆腐塊(T4)に切断させるカッター(4)と、
前記カッター(4)により切断された複数の切断豆腐塊(T4)を製品容器(T)の底部に収容させるようにガイドするシュート(5)と、
前記掬い器(32)の開口部に開閉可能に設けられ、上層豆腐塊(T3)を掬い取った掬い器(32)が上向き姿勢から伏せ姿勢に反転した状態において、掬い器(32)の開口部を閉鎖させて掬い器(32)からの上層豆腐塊(T3)の落下を防止させる閉鎖位置と、掬い器(32)の開口部を開放させて掬い器(32)から上層豆腐塊(T3)を前記複数の切断豆腐塊(T4)の上に被せるように製品容器(T)内に落下収容させる開放位置との間で開閉可能に形成されている開閉蓋(6)とを備えていることを特徴とする寄せ豆腐製造装置。
