Abstract
【解決手段】魚介類から肉を採取する採肉工程と、キレート剤を含む水で該肉を晒す晒し工程と、該肉を冷凍する冷凍工程とからなる。キレート剤としてはフィチン酸又はクエン酸を使用することができる。プロテアーゼ活性の高い魚介類から冷凍すり身を製造する方法として好適である。

Claims (4)
- 魚介類から肉を採取する採肉工程と、キレート剤を含む水で該肉を晒す晒し工程と、該肉を冷凍する冷凍工程とを備えたことを特徴とする冷凍すり身の製造方法。
- 前記キレート剤がフィチン酸又はクエン酸であることを特徴とする請求項1に記載の冷凍すり身の製造方法。
- 前記魚介類が魚、イカ、タコ、エビ又はオキアミであることを特徴とする請求項1又は請求項2に記載の冷凍すり身の製造方法。
- 前記イカが、ソデイカ(Thysanoteuthis rhombus)であることを特徴とする請求項3に記載の冷凍すり身の製造方法。
