Abstract
本発明は、例えばドーナツ、菓子パン、餅などを棒状に押し出した食品生地体を捩じって成形する捩じり食品の成形方法及びその装置を提供するものである。
【解決手段】
回転ノズルの回転中心軸から偏心して備えた吐出口より食品生地を吐出して食品生地体を形成する際に、吐出された前記食品生地体が前記回転ノズルの回転中心軸と同心状に配置した捩じり付与部材に接触しながら前記捩じり付与部材の周りを回転することにより捩じり食品を成形する。

Claims (4)
- 回転ノズルの回転中心軸から偏心して備えた吐出口より食品生地を吐出して食品生地体を形成する際に、吐出された前記食品生地体が前記回転ノズルの回転中心軸と同心状に配置した捩じり付与部材に接触しながら前記捩じり付与部材の周りを回転することを特徴とする捩じり食品の成形方法。
- 食品生地を吐出する吐出口を回転自在の回転ノズルの回転中心軸から偏心して設け、捩じり付与部材を前記回転ノズルの回転中心軸と同心状に配置するとともに、前記回転ノズルの下面より突出して設けたことを特徴とする捩じり食品成形装置。
- 前記吐出口が前記捩じり付与部材と一部重なるか、僅かに離れて配置することを特徴とする請求項2に記載の捩じり食品成形装置。
- 前記吐出口を複数設け、各々の吐出口が前記捩じり付与部材と一部重なるよう配置する、及び/又は、僅かに離れて配置することを特徴とする請求項2に記載の捩じり食品成形装置。
