【発明の属する技術分野】
本発明は、カルボキシル基を有するグルコースポリマーの製造法及びこのグルコースポリマーを含有することにより、イオン交換能力を有する組成物に関する。この組成物は、このグルコースポリマーが有するフリーのカルボキシル基の作用によって、イオン交換効果が得られるものであり、また低粘性で、例えば、洗剤のビルダーや、カルシウムイオンなどを結合させたカルシウム補給食品などが例示される。
また、低カロリーデキストリンの製造法(例えば、特許文献10参照)には、澱粉又はデキストリンをクエン酸と水に溶解、分散させ、スプレー乾燥装置で噴霧乾燥、更に加熱を減圧下、140〜220℃で行う方法(ポリサッカライドの調製)(例えば、特許文献11参照)も報告されており、アミロース分解酵素の作用に不活性であることにより決定される非消化性生成物を生成させて難消化性を高め、水不溶性物質を製造するものである。これもクエン酸のカルボキシル基をフリーの状態を維持させながら反応させたものとは考えられず、架橋剤として利用されているに過ぎない。両者ともカルボン酸のフリーカルボキシル基のイオン交換能力を目的とするものではなく、カルボン酸を単なる酸触媒として用いているものである。
また、分子内にカルボキシル基の電荷をもつ多糖類として、ペクチンやアルギン酸等があるが、これらは水溶液中で高い粘度を示し、他の物質へ添加した場合に物性に大きな変化を生じるという欠点がある。
