【課題を解決するための手段】本発明による殺菌剤は、乳酸と乳酸ナトリウムをアルコール/水系に溶解させて緩衝性エタノール水とし、有機酸を加えたうえに糖質とチアミンラウリル硫酸塩を配合したものであるため、野菜の風味を損ねることなく糖質の甘みとともにラウリル硫酸の効果で、野菜の日持ち向上に役立つものであり、また緩衝性エタノール水と有機酸の相乗効果により、大腸菌および黄色ブドウ球菌ならびにボツリヌス菌の生育を阻止する作用が期待できる。一方可食性洗浄剤は、同じく緩衝性エタノール水に同じく有機酸を加えたうえにショ糖エステルとモノグリセリドと糖質を配合したもので、緩衝性エタノール水と有機酸の相乗効果にモノグリセリドの殺菌力が加わり、さらにショ糖エステルによる洗浄効果および有機酸の野菜のあく抜き速度の向上が働いて、農薬などの除去に効果を示し、かつBacillus属やMicrococcus属など好気性グラム陽性菌に強い阻止作用を有し、野菜変色防止に効果があることが分かって本発明を完成した。
