この種の食肉スライサとして、例えば、特許文献1(特開2002−239981号公報)に記載されているように、丸刃物の側方に肉塊を保持する肉箱を配置し、丸刃物を回転させながら肉箱を丸刃物とほぼ平行方向に往復移動させる動作と、肉箱から肉塊を所定量ずつ送り出す動作とを繰り返すことで、肉箱から送り出される肉塊を丸刃物で所定の厚さにスライスするようにしたものがある。

このような食肉スライサでは、スライス作業時に発生する肉の切屑(肉屑)が丸刃物に付着するが、この丸刃物に付着した肉屑は、時間が経過して乾燥してくると、丸刃物にこびりついた状態になって、布巾等では簡単に拭き取れなくなるため、丸刃物に付着した肉屑を取り除く場合には、作業者が回転中の丸刃物に包丁等を宛がって肉屑を掻き落としたり、或は、食肉スライサから丸刃物を取り外して、丸刃物をたわし等で水洗いする等、手作業で丸刃物に付着した肉屑を取り除くようにしている。

しかし、丸刃物に乾燥してこびりついた肉屑を手作業で奇麗に取り除くことは容易ではなく、その作業が甚だ面倒であるという欠点がある。しかも、清掃作業中に手指が誤って丸刃物の刃に触れて怪我をするおそれもある。

本発明はこのような事情を考慮してなされたものであり、従ってその目的は、丸刃物に付着した肉屑を自動的に奇麗に取り除くことができ、丸刃物の清掃性及び安全性を向上させることができる食肉スライサを提供することにある。

【課題を解決するための手段】
上記目的を達成するために、本発明の請求項1は、丸刃物を回転させながら肉塊を保持する肉保持部を該丸刃物とほぼ平行方向に往復移動させて肉保持部から送り出される肉塊を丸刃物でスライスする食肉スライサにおいて、前記丸刃物に付着した肉屑を掻き取るための掻き取り手段を移動可能に設けると共に、前記丸刃物に水をかける水洗手段を設け、前記丸刃物を清掃するときに、前記掻き取り手段を前記丸刃物に当接させた位置(以下「刃物清掃位置」という)に移動させ、且つ、前記肉保持部の往復移動を停止させた状態で前記丸刃物を回転させながら前記水洗手段から前記丸刃物に水をかけることで、前記丸刃物に付着した肉屑を前記掻き取り手段で掻き取りながらその肉屑を洗い流し、前記丸刃物の清掃終了後に、前記掻き取り手段を前記丸刃物から離して前記肉保持部の往復移動の邪魔にならない位置まで移動させるように構成したものである。

このようにすれば、丸刃物の清掃作業時に、丸刃物に付着した肉屑を掻き取り手段で自動的に掻き取りながら水洗手段から出る水で洗い流すことができる。しかも、丸刃物に乾燥してこびりついた肉屑でも、水で濡らして丸刃物から剥がれやすくしながら掻き取り手段で掻き取ることができ、能率良く奇麗に掻き取って洗い流すことができる。更に、作業者が手作業で丸刃物に付着した肉屑を取り除く必要がないので、手指が誤って丸刃物の刃に触れて怪我することも回避することができる。

【発明の実施の形態】
[実施形態(1)]
以下、本発明の実施形態(1)を図1乃至図6に基づいて説明する。まず、図1に基づいて食肉スライサ全体の概略構成を説明する。食肉スライサの本体架台11の上部には、刃物架台12が取り付けられ、この刃物架台12に、肉塊(図示せず)をスライスするための丸刃物13が回転可能に支持されている。この丸刃物13の外周側には、安全カバー58が設けられ、この安全カバー58により丸刃物13の周縁部に指や手が触れることを防止するようにしている。
