【発明の属する分野】
本発明は、シート状海苔の表面に振掛け食品を振り掛けて、海苔に定着させる装置及び方法に関するものである。

【従来の技術及び発明が解決しようとする課題】
フィルム包装したシート状海苔にておにぎりを包んだ包装おにぎりが販売されている。
包装おにぎりは、フィルムによって海苔とおにぎりは隔絶しているが、食する際にフィルムだけを剥ぎ取って、海苔を直接におにぎりに被せることができる。
おにぎりは、中身の具によって異なる味を楽しむことが出来たが、海苔自体の味に変化を与える発想はなかった。

出願人は、以前に味付けしたシート状海苔の間にゴマを挟んだスナック食品の製造装置を案出した(特許文献2)。
上記装置は、味付け液を染み込ませた挟みローラの間に、海苔を2列の状態で通して味付けを行い、一方の海苔の接着液塗布面にゴマを振り掛けた後、列違いに隣合う他方の海苔をゴマの上から被せるのである。
上記装置では、海苔を1枚づつ挟みローラに通し、更に、味付けした海苔の1枚づつにゴマを振らねばならず生産能率が悪い。

又、出願人は、以前に定形海苔を帯状に連接する装置を案出した(特許文献1)。
上記装置は、定形海苔を搬送しつつ、海苔の端部を液で濡らすと共に、該濡れた部分に隣合う海苔の端部を重ねて加熱し、海苔を順に連接する。

出願人は、上記海苔連接装置と、スナック食品製造装置のゴマ振りまでの構成と、帯状海苔を所定の大きさに切断する装置を組み合わせた味付け海苔の製造装置を試作した。
海苔1枚1枚に味付けをしたり、ゴマ振りをする従前の装置に較べて、生産能率は向上したが、海苔に対するゴマの定着が悪く、ゴマが剥離し易い問題のあることが分かった。ゴマ以外の振掛け食品でも同様であった。
従前のスナック食品の場合、内面に接着液を塗布した2枚のシート状海苔でゴマの層を挟む構成であるから、ゴマの剥離は殆ど生じなかったのである。

又、2種類以上の比重の異なる振掛け食品を混ぜて振り掛ける場合、振掛け食品を収容しておく容器内で食品が均一に混ざらず、帯状海苔に振り掛けた際に、比重の異なる食品の分布が不均一になる。
本発明は、シート状海苔の表面に振掛け食品をほぼ均一分布して定着させる装置及び方法を明らかにするものである。

【課題を解決する手段】
本発明に係る表面に振掛け食品を定着させるシート状海苔の製造装置は、
帯状海苔Sの表面に連続的に接着液を塗布する接着液塗布装置(2)と、

【作用及び効果】
帯状海苔Sの接着液塗布面に振掛け食品Fを振り掛け、更に振掛け食品の上から接着液R2を噴霧すると、後から噴霧された接着液R2は振掛け食品Fの表面から縁に回りこんで、帯状海苔Sの表面に最初に塗布した接着液R1の層に繋がる。この状態で接着液R1、R2を乾燥させると、接着液が乾燥固化して強い接着作用を発揮し、振掛け食品は帯状海苔S上に定着する。
帯状海苔Sに塗布した接着液R1だけで振掛け食品Fを帯状海苔Sに定着させる場合に較べて、本発明では、振掛け食品Fの上から接着液R2を噴霧することにより、該接着液R2が振掛け食品Fを包み、帯状海苔Sに塗布されている接着液R1の層に繋がるから、帯状海苔Sに対する振掛け食品の定着力は強く、振掛け食品が帯状海苔Sから剥離することを防止する効果は大きい。

【発明の実施の形態】
図1は、本発明の表面に振掛け食品を定着させたシート状海苔の製造装置のレイアウトを示している。
上流側から下流側へ順に、海苔連接装置(1)、接着液塗布装置(2)、振掛け食品振掛け装置(3)、接着液噴霧装置(4)、乾燥装置(5)、切断装置(6)を配置している。

海苔連接装置(1)は、図3に示す如く、矩形の定形海苔S1を長尺帯状に連接するものであって、本願出願人が以前に案出した公知のものである。
図2に示す如く、海苔連接装置(1)は、ストッカ(11)に積み重ねて収容した定形海苔の束から最下部の海苔を1枚づつ取り出す定形海苔供給手段(12)と、供給された海苔を等間隔に搬送する第1搬送手段(13)と、第1搬送手段(13)の下流側に配備され第1搬送手段(13)よりも搬送速度の遅い第2搬送手段(14)とを具えている。
図4に示す如く、第1搬送手段(13)と第2搬送手段(14)の間に、搬送途上のシート状海苔の上流端を濡らすための液塗布手段(15)が配備され、第2搬送手段(14)の入り口上方に押圧ローラ(16)が配備される。

前記液塗布手段(15)によって上流端が濡れた定形海苔S1が、第1搬送手段(13)と第2搬送手段(14)の搬送速度の違いによって、第2搬送手段(14)の上で、後続する定形海苔の下流側端部と重なり合い、押圧ローラ(16)が該重なり部を加熱しつつ押圧して、定形海苔S1を搬送順に連接し、帯状海苔Sとして接着液塗布装置(2)に連続的に供給する。
定尺海苔S1を繋ぐために該海苔の端部を濡らす液は、実施例ではアルコール分を多く含む液、具体的には日本酒が用いられる。

実施例では、塗布ロール(21)、受けロール(24)及び付けロール(22)は、帯状海苔Sの搬送方向に夫々2個づつ配備されている。

海苔連接装置(1)から接着液塗布装置(2)へ帯状海苔Sが供給されると、受けロール(24)と塗布ロール(21)が、帯状海苔Sを引き込む方向に回転し、両ロールの間に帯状海苔Sが引き込まれる。
接着液供給装置(2)から供給された接着液によって表面を濡らした塗布ロール(21)に海苔が接触して、該海苔に接着液が塗布される。
接着液は、澱粉質の液に、みりん、砂糖、醤油等で味付けが成されており、水より粘度が高い。
接着液は、海苔に振掛け食品を定着させる働きをするのは勿論、海苔に味付けする役割をなす。

振掛け食品振掛け装置(3)は、図7に示す如く、底面が斜めに開口した容器(31)の該開口底面に振動シュート(32)を配備し、該振動シュート(32)の底面にバイブレータ(33)を連繋して構成される。振動シュート(32)の下端は帯状海苔Sの移行路より少し高位置で該移行路の真上にあり、振動シュート(32)の下端幅は帯状海苔Sの幅長さに対応している。
容器(31)内に、唐辛子、ゴマ、シラス、乾燥小海老、乾燥させた野沢菜漬を細かく刻んだもの等の粉状、粒状或いは小片状の振掛け食品Fを収容しておく。

振動シュート(32)の傾斜角度、振動シュート(32)と容器(31)下面との間の隙間幅、バイブレータ(32)の振動数は調整可能であり、振掛け食品の粒度、振掛け食品の振動シュート(32)上での滑り特性に応じてそれらを調整して、帯状海苔Sに単位長さ当たりの振掛け食品の振掛け量を略一定にし、且つ略均一分布に振り掛けることができる。

実施例では、振掛け食品振掛け装置(3)は、帯状海苔Sの搬送方向に2基並べて配備され、夫々の振掛け装置(3)(3)の容器(31)は、比重の異なる振掛け食品を収容している。
比重の異なる食品を1つの容器(31)に収容すると、振動シュート(32)の振動が容器(31)に伝わり、容器内で比重の大きい食品が下部に、比重の小さい食品が上部になる様に分離してしまい、均一に混ざった状態で帯状海苔Sに振り掛けることは出来ない。実施例の様に、比重の異なる振掛け食品を別個の容器(31)(31)に収容して、別個に振り出せば、夫々の振掛け食品を帯状海苔Sに略均一に振り掛けることができる。

後段配置の接着液噴霧装置(4)は、帯状海苔Sの上面に振り掛けた食品Fの上から、噴霧ノズル(41)によって接着液を噴霧するものであり、振掛け食品を帯状海苔Sに接着する効果を有するものであれば、接着液は前記接着液塗布装置(2)によって塗布する接着液と同じものでも可いし、別のものでも可い。
噴霧ノズル(41)は、接着液飛散防止カバー(42)内に収容されている。
帯状海苔S上の振掛け食品Fは、帯状海苔Sに塗布した接着液が乾かない内に、該接着液塗布面に振り掛けられており、接着液によって海苔に引っ付いた状態である。
従って、噴霧ノズル(41)の噴霧圧を最適に設定することにより、振掛け食品を吹き飛ばすことなく、振掛け食品の上から接着液を均等に噴霧できる。
図10に示す如く、噴霧された接着液R2は、振掛け食品Fの表面から縁に回りこんで、海苔表面に最初に塗布した接着液R1の層に繋がる。

前記接着液塗布装置(2)、振掛け食品振掛け装置(3)及び接着液噴霧装置(4)は、共通の基台(7)に配備され、接着液塗布装置(2)の排出側から接着液噴霧装置(4)の下流側までは、帯状海苔Sは共通のコンベア(43)によって下流側に案内される。

乾燥装置(5)は、前記接着液噴霧装置(4)によって接着液が噴霧された帯状海苔Sを進入口(52)から侵入させ、接着液、及び接着液で濡れた海苔と振掛け食品を乾燥させ、排出口(53)から排出する。
接着液及び振掛け食品を含む海苔全体が加熱乾燥されることにより、海苔の風味が増し、又、味付け接着剤が香ばしく臭い、海苔全体の美味しさが増す。

帯状海苔Sが切断長さに対応する分だけ移動するタイミングと、回転刃体(62)の回転軸が90゜回転するタイミングが一致しており、帯状海苔Sを単位長さに切断するのである。
実施例では、帯状海苔Sに繋ぐ前の元の定形海苔S1の大きさに切断する。
